1 lb. ground hamburger You can substitute with 1 lb. ground turkey for a healthier loaf!
1 cup ketchup
1 cup crushed crackers, crushed into crumbs
1/2 cup onion, chopped You can use dried onion as a subsititute
1 cup velveeta cheese, chopped
salt & pepper to taste
Here's What you do:
Pre-heat oven to 375 degrees. Mix hamburger, ketchup, crackers, onion, cheese, and salt and pepper in a large bowl. Using a casserole dish form meat mixture into what looks like a bread loaf. Cover with aluminum foil and bake for 45 minutes. After 45 minutes remove foil and top with ketchup, bake for another 10-15 minutes, or until done.
Freezer Cooking Variation
This meal is a very good meal to use for freezer cooking! In order to freeze, just make the meat mixture, (do not cook) put in Ziplock freezer bag, Freeze. Meatloaf will stay good for 3 months after being frozen. When you are ready to eat it, just pull it out of the freezer, let it de-thaw, preheat oven to 375, form into loaf (in a casserole dish), and bake as directed above! It tastes just as good as if you just prepared it fresh that day!
