Frozen Meal Storage Do's and Don's

What vegetables freeze well?

Making a stew and then freezing some of it for later is an excellent way to budget your time and still eat well.

Keep in mind some vegetables freeze better than others.
For best results, try to avoid freezing potatoes and cabbage as they can become grainy or limp and water-logged in a frozen stew, while other vegetables I have found work quite well such as, peppers, corn, beans, zucchini, squash, asparagus, mushrooms, onions, and cherry tomatoes, etc then add your choice of meat if desired. See below for an easy recipe.

To preserve the flavor and nutritional value of frozen foods, you'll want to remove as much air as possible.

The container you use should be moisture resistant and freezer safe-you don't want to use a container that will become brittle and possibly crack.

Remember to leave about half an inch of space between your pint of soup and the lid so it will have room to expand in the freezer.

Yummy Soup & Almost Vegetarian

Secret Ingredients to make any stew delicious!

This soup is wonderful for reheating in the microwave and having instant 3 minute meals at your ready.

Ingredients:
*yellow peppers
*1 or 2 potatos (You may want to omit the potatoes if freezing)
*4 tomatos
*handful of cherry tomatos
*frozen or canned corn
*italian squash
*handful baby carrots
*1 steak umm slice
*red beans (or similar)
*elbow pasta (I use Smart Taste)
*roasted garlic oil
*basil
*salt

I start out with 1/3 to 1/2 a pot of water and then begin adding my vegetable selection of the week: 2 yellow peppers, 1-2 chopped potatos, 4 medium tomatos, handful of cherry tomatos, some frozen corn, handful of baby carrots, and a sliced italian squash.
I add one slice of a frozen Steak Umm on top of my stew-that way as the stew cooks, the flavor of the Steak Umm merges throughout the stew for a delicious meaty flavor even though everything else is vegetarian.
For Spice, I just added some salt, lots of basil and crushed red pepper to give it some bite.
I splashed some roasted garlic oil on top (a teaspoon or two), which makes the house smell delicious as it's cooking.

I cook the beans and noodles separately and add when the vegetables are ready.

I used uncooked red beans which take some time to soften, so I put them in my slow cooker about 4-5 hours earlier and just left them to cook themselves-strained and rinsed them off and tossed them in the soup. This adds some extra bulk and is a good source of protein and fiber.

In a separate pot, I prepared some Ronzoni Smart Taste elbow pasta and also added that to the soup as the final texture extravaganza.

Note:(the uncooked redbeans can be substituted with pretty much any kind of pre-cooked beans if you're looking to save some time.)

Don't forget to freeze a cup or two for a fast meal later! :)

Blanching For Fresher Tasting Frozen Vegetables

Blanching is the process of briefly boiling your fruits or vegetables for a couple minutes to neutralize the bacteria and enzymes before freezing them. It helps to preserve their flavor and color. When removing the vegetables from the boiling water, it is then plunged into cold water to stop the cooking process and promptly frozen.

Breakfast Bliss simple ingredients:
*Bob's Red Mill Grain Hot Cereal (you can use 5 grain, 7 grain, 10 grain and other varieties as well)
*Real Maple Syrup
*Milk or Soymilk

To Make in the microwave: Add 1/4 cup Bob's Red Mill Cereal to 3/4 cup of water and heat for 3-4 minutes

Add 1-2 tsp real maple syrup and a splash of your choice of milk or soymilk.

Split Pea and Ham soup

Quick and easy-nothing to it

Only 2 ingredients are required for this no brainer-peas and ham. With a pound of split peas and a can of precooked ham, simply add water, and heat it up! An almost instant meal, quite tasty and full of fiber and protein. As you know, I'm all for fast, cheap and easy meals-it's hard to beat split pea and ham soup!

Ramen Noodle Surprise

Pure Indulgence

Now this 3 minute recipe is for those who need a break from being a Health Nut! Pure indulgence!
Ramen Noodle Surprise Top Secret Ingredients:

-1 bag Chili Ramen noodle soup (also works with chicken but chili is a bit spicier which I like)
-Spoonful of mayonnaise
-1 can of tuna

1) while the noodles are still in the bag, crush it apart on the counter-I use the palm of my hand and squish it (this helps it cook faster and there is less splattering on your chin when you eat it)
2) Put noodles in microwave safe bowl
3) Add just enough hot water to cover noodles and cook in microwave for 3 minutes...(if you used too much water or had to use cold water it may take another minute or two)
4)Add seasoning packet and mayonnaise, blend well with spoon
5) Add tuna, stir,
6) You can add a bit of cold water over it now to cool if off faster so you can eat it sooner, plus this will help make it soupier, which I also like.

    Your soup suggestion of making a big pot and freezing some for later is a great idea - it saves me so much time I love it! By the way that "Real Stew" recipe book you have featured is great, I use mine all the time.
