Delicious 3 Hour Diet Recipes
Keep Portion Sizes Under Control
For sauce
12 oz (1 1/2 cups) nonfat plain yogurt
3 tablespoons honey
2 tablespoons fresh lime juice
3 tablespoons finely chopped fresh mint
For skewers
4 firm-ripe plums, each cut into 8 wedges
4 firm-ripe peaches, peeled and each cut into 8 wedges
1/2 ripe pineapple (1 1/2 lb), peeled, cored, and cut into 1-inch pieces
Special equipment: 48 (8-inch) wooden skewers soaked in water 1 hour
Prepare grill for cooking.
Stir together yogurt, honey, lime juice, and mint in a small bowl and chill until ready to serve.
Thread about 4 pieces of fruit onto each skewer. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill fruit in batches on lightly oiled grill rack, turning once, until browned and slightly softened, about 5 minutes total. Serve fruit on skewers with sauce on the side.
Cooks' note:
You can use a lightly oiled well-seasoned ridged grill pan to cook the fruit.

California Pasta Salad
Servings:10 to 15 servings

Ingredients:
1 lb. thin spaghetti or vermicelli, broken into 1-inch pieces, cooked
3 lg. tomatoes, diced
2 md. zucchini, diced
1 lg. cucumber, diced
1 md. green pepper, diced
1 sweet red pepper, diced
1 lg. red onion, diced
2 cans (2-1/4 oz. each each) sliced ripe olives, drained
1 bottle (18 oz.) Italian salad dressing
1/4 cup grated Parmesan or Romano cheese
1 tbsp. sesame seeds
2 tsp. poppy seeds
1 tsp. paprika
1/2 tsp. celery seed
1/4 tsp. garlic powder
Directions: Combine all ingredients in a large bowl; cover with plastic wrap and refrigerate overnight to blend flavors.
Stuffed Green Peppers
4 Servings
Ingredients:
6 md. tomatoes, peeled, seeded, and chopped
1 md. onion, chopped
3 celery ribs, diced
1 can (8 oz.) tomato sauce
1 cup water
2 tsp. salt, divided
1/2 tsp. pepper, divided
4 md. green peppers
1 lb. lean ground beef
1 cup instant rice, cooked
1 tsp. dried basil
Directions:
In a large saucepan or Dutch oven, combine tomatoes, onion, celery, tomato sauce, water, 1 ts salt and 1/4 ts pepper. Bring to a boil. Reduce heat and simmer for 10 to 15 minutes. Meanwhile, cut tops off of green peppers and remove seeds. Set aside. In a bowl, combine ground beef, rice, basil and remaining salt and pepper. Mix well. Fill peppers with beef mixture. Carefully place peppers, in tomato sauce. Spoon some sauce over tops of peppers. Cover and simmer for 40 to 45 minutes or until beef is cooked and peppers are tender.
3 Hour Diet Pumpkin Bread
Ingredients:
3 cups flour
3 cups sugar
1 cup oil
1 cup pumpkin
4 eggs
1 tsp. nutmeg
1 tsp. cinnamon
1-1/2 tsp. salt
2/3 cup water
2 tsp. baking powder
Directions:
Mix all ingredients well. Pour into very heavily greased loaf pans. Cook 1 hour at 350°F.
