Quick and Easy 5 Cup Salad
One of the things I liked the most about Mom's 5 cup salad - besides the taste - was that it was so colorful. This salad also has a variety of tastes with the sweetness of the marshmallows; the tartness of pineapple, Mandarin oranges, and sour cream; and the surprising feel of the coconut among the other soft textures.
I hope you enjoy this recipe as much as our family has over the years. It is quick, easy, and delicious! Can't ask for anything more when heading off to a picnic or potluck!
5 Cup Salad Recipe
- Serves: 6-8
- Prep Time: 15 minues
- Total Time: 6+ hours
This salad recipe has been a favorite in our house for decades! Both my mom and I have prepared this salad for many occasions. Not only is it a good summer salad, but it also works well around such holidays as Thanksgiving and Christmas because of its colors. You really can take this most anywhere, as long as you can keep it refrigerated until time to serve. I sincerely hope you try it out and enjoy the delicious flavors.
Ingredients
- 1 cup coconut
- 1 pkg. small marshmallows
- 1 can crushed pineapple (drained)
- 1 large can Mandarin oranges (drained)
- 1 cup sour cream
- Maraschino cherries for color
Instructions
Simply add the first five ingredients into a bowl and gently stir to combine.
Cut the Maraschino cherries in half, or leave whole if you prefer. Then add some of the cherries to the dish and stir. Hold out enough cherries to place on top of the salad to add a festive, colorful look.
Cover the dish with SaranWrap or foil. Let set in the refrigerator for at least 6 hours or overnight before serving.

- This recipe would be great for a baby shower. It actually works most anywhere and people love it. We hardly ever have leftovers!

My very first recipe book was a Betty Crocker cookbook and I learned so much through the teaching and wisdom provided in that book. The easy to follow directions and pictures came in handy for this semi-newbie. Previously I had only baked cookies and tried a few simple dishes.
My aunt gave me the first book - which I still have after 45 years - and it is well-worn and spattered. If you are a cook, you will know what I mean.
You cannot go wrong with her collection of cookbooks whether you are brand new to cooking and baking or looking for new recipe ideas for your family.

This is an updated version of the second cookbook I received when I was married 45 years ago. It was well-used for a good reason. Most of the recipes were easy enough for a beginner like me, and the variety of recipes and easy directions helped me prepare nutritious meals.
As I grew as a cook and baker, my family appreciated my willingness to try new recipes. I would check off those I tried and made notes in the margins regarding whether they were something we would want to use again.
I like that this recipe book has a spiral binding. Mine was not and I always had to prop it open. This looks like it would be much easier to use. Give it a try - I don't think you will be disappointed!
