Pancakes have been around since the early 1400's. We know this because they're mentioned in early-day cookbooks. Besides, the Pancake Appreciation Society said so.

One of my earliest memories was of Mama making pancakes on Christmas morning. Every year, she'd wait until we had opened our presents and had time to play awhile. Then she'd head to the kitchen.The menu never changed: Pancakes with maple syrup, bacon, orange juice.
Ten o'clock, like clockwork year after year after year.
There's something very sweet about Christmas traditions. I can't eat a pancake (even in July) without thinking about Christmas mornings.

Got Fruit?
Sneak it into your next stack of pancakes!
Pick up any book about healthy eating and you'll find finger-wagging advice to eat several servings of fruits and vegetables daily. I confess, I do consciously work them into my meal plans, but I rarely end up eating as many fruits and veggies as the experts recommend. For one thing, that is (frankly) a LOT of chewing, folks. If I could find another way to incorporate those goodies into my diet (short of slurping several smoothies a day), I would.Here's a great solution: Work fruit into your pancakes! Pancakes are an anytime-meal that's downright comforting and healthy--if you add extra ingredients. Here's a Puff Pancakes with Fruit recipe that incorporates (are you ready?) apples, strawberries, bananas, and pears! How's that for a healthy day-starter?
I personally Iove Oatmeal Pancakes with Fruit, which uses wheat germ and your choice of frozen fruit. I like keeping blueberries and strawberries in my freezer, for recipes just like that. Even the name sounds healthy, doesn't it? Oatmeal has been proven to lower cholesterol, too, so it's a combination of delicious, health-producing goodness.

Go easy on beating the batter. Mix just until dry ingredients are worked in. Otherwise you'll have blah pancakes. And who likes blah?

Five Ways Kids Like Mini-Pancakes
Fix Saturday morning pancakes for your family...
I've never met a child who doesn't like pancakes, and even more so if you add extra goodies like chocolate chips, mashed bananas, or cranberries. Make them miniature and you'll never hear the end of it. Why?1. "Miniature" can be bite-sized or fist-sized, depending on their mood. Make them teeny-tiny, and suggest that your child create a design of concentric circles. No cutting necessary!
2. Stack minis like tiny towers. Top with whatever sounds yummy.
3. Freeze mini-pancakes in airtight bags for an after-school snack.
4. Take along a small zip-lock bag of minis for an easy on-the-go treat for toddlers.
5. Dress up a bowlful of mini-pancakes with cherry topping and whipped cream for a tasty dessert. Top with sliced almonds.

Aunt Jemima Pancake Flour was the first mix to e sold commercially in 1889 from St. Joseph, Missouri.In 1986, an event that bills itself as the World's Largest Pancake Breakfast was revived for the 350th anniversary of Springfield, Massachusetts. The breakfast has been held every year since then. Hundreds of volunteers help with the event. In 1999, more than 71,233 servings of pancakes were served to more than 40,000 people. If you stacked up all those pancakes, they'd be more than 2 miles high!

A Basic Recipe from Pioneer Days
Pioneer PancakesBlend together:
1 cup milk
3/4 cup whole wheat
Blend for 4 minutes. Turn blender to low.
Add:
2 eggs
1T. sugar
1/2 t. salt
1 tsp. soda
2 tsp. baking powder
4 tsp. oil
Batter will be runny. Cook on hot griddle (mine worked best at around 300-350 degrees)

2. Browning time:1 minute.
3. So, smartypants, how can you make 3 pancakes in 3 minutes?

Here's what you'd do:
Pour two pancakes and brown the first side. Flip one of them, but take the second pancake off & pour the third. After another minute passes, remove the first pancake, flip the third, and put the second back on the grill. Cook both until golden brown.
See? Wasn't that easy?

What now?
How to keep pancakes warm, you ask? Simple! Just layer them between dish towels. (Do I need to say "clean" dish towels?) Keep them warm in a 250-degree oven, but don't overdo. Ten minutes is about right, but longer will dry them out.
