Tutu Mary's Fruit Salad Recipe ©2005

1 can pinapple chunks, drained
1 can mandarin oranges, drained
1 crisp apple, cut in chunks
1 firm ripe banana, cut in chunks
2 kiwi fruit, peeled, cut in chunks
1 cup sour cream, regular or non-fat
1/4 cup toasted coconut, or chopped roasted macadamia nuts

Blend all ingredients gently, top with coconut or nuts. Refrigerate before serving.
Haupia Coconut Pudding Recipe ©2005

1/4 cup sugar
5 tablespoons cornstarch
3/4 cup water
1 can coconut milk (12 oz.)

Combine sugar and cornstarch; stir in water and blend well. Pour coconut milk into saucepan. Stir sugar mixture into coconut milk; cook and stir over low heat until thickened. Pour into 8-inch square pan and chill until firm. Cut into 2-inch squares.

My Favorite Hawai`i Spots & Stops

Be sure to take your camera!

These are all on Oahu, since it's my home. I'll add more as they come to me, so check back often!
  • Rainbow Viewing: H-2 drive toward North Shore after 2pm and before sunset. For a safe spot to stop, get off at Mililani Mauka exit, left at the signal and pull into the shopping area parking lot for rainbow photos. As of 2010, we have some great restaurants in Mililani Mauka, finally! Poke Stop (local grinds with a Cajun twist!), Mililani Chinese Restaurant and Genki Ramen in addition to McDonald's and a Tesoro gas station for a fill up before heading back to Waikiki.
  • Other-Worldly Experience: Lyon Arboretum and Manoa Falls on a weekday morning. Exotic bird escapees from Paradise Park call out from treetops in the mists. You'll swear you're in Jurrassic Park! Take an umbrella and something waterproof to sit on the grass and drink in the sounds & scenery. Sturdy walking shoes a must. Get a snack and coffee at Manoa Marketplace on your way back.
  • Meditation locations: Byodo-in Temple, Kahaluu, and Mu-Ryang-Sa Buddhist Temple, Palolo, are architectural replicas of temples and gardens in Japan and Korea. Byodo-in is operated as an attraction to the public. Mu-Ryang-Sa is a working monastary, place of worship and cultural center of the Korean community. On a smaller scale, late afternoons and weekends, the East-West Center garden at University of Hawai`i at Manoa is a nice spot to slow down and take deep breathes in the presence of trickling water and neatly trimmed greenery, while taking a campus tour.
  • Scenic Calendar View: The last HVB stop at the end of H-3, before dropping down to the Marine Corp. Air Station. Photo-op of the windward side across Kaneohe Bay to Chinaman's Hat, with the backdrop of the Ko`olaus. Stop in Kailua Town for shopping and lunch, before or after. Teddy's Bigger Burgers, Lanikai Juice, Morning Brew, Boots' & Kimo's, Agnes' Portugese Bake Shop, are just a few spots that come to mind.
  • Islands, Ocean & Sealife: Sealife Park, as seen in "50 First Dates" is over on the windward side. I just visited the new-improved lookout at Makapu`u Point, on Kalanianaole Highway for another panoramic view of paradise and "Rabbit" Island (think crouching rabbit with ears laying back--I didn't get the name until seeing a neon light overlay of the rabbit on the shape of Manana Island at Sealife Park's Cafe!)
  • City/Ocean/Mountain View: Skip the harrowing drive along Tantalus or Round Top Drive, and take the elevator up Aloha Tower at the water's edge in downtown Honolulu. It's much safer, and there's a choice of spots ground-level to catch Pau Hana music, drinks & pupus, with a sunset view.

The ultimate "rainbow" experience...

Presidential candidates aside, one of the most heated debates in Hawai`i can be which local outlet offers "da bes'" shave ice, or "ice shave" as it's called on the Big Island. Again, these are all on Oahu from my own sightings. Will leave it up to you to decide or try all on your circle-island tour!
