A Danish Treat

The first time I tried Aebleskivers I was at a Scandinavian Fest in Junction City Oregon and it was love at first bite. They were round, looked somewhat like a donut hole, they were sprinkled with powdered sugar and there was a side of preserve for dipping...they were delicious. They have a pan cake /waffle like texture but with the delicate richness of a crepe. Years later while in Solvang California I saw a Aebleskiver pan in a shop window and I was soon making them myself.

Recipe

The name makes people believe that there are slices of apples inside, which is correct--- if you put apple slices inside! You see, everybody, including me, has their own favorite recipe and way of serving them, all depending from where in Denmark the recipe came from.


Because of the way you turn the cooked batter to the top of the pan creating a ball - an Aebleskiver is easy to fill with preserves, fillings, or fresh fruit. There are so many variations or they can just be dusted with powdered sugar and still taste great on their owns.


Here is a basic recipe...


2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon ground cardamom
1/2 teaspoon salt
2/3 cup sugar
3 large eggs
1 teaspoon vanilla extract
2 cups buttermilk

Unsalted butter (for frying)

Powdered sugar
Raspberry preserves

RECIPE METHOD

Preheat cast-iron aebleskiver pan over medium-low heat. Whisk flour, baking powder, baking soda, cardamom and salt into medium bowl to blend. Using electric hand-held mixer, beat sugar, egg yolks and vanilla in large bowl until light. Mix in dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.

Using clean dry beater, beat egg whites in clean medium bowl until firm peaks form. Fold egg whites into batter. Working in batches, melt small amount of butter in each pan indentation. Using 2 tablespoons batter for each, fill pan indentations. Cook until sides are set and golden brown, about 3 minutes. Using wooden skewer, carefully turn aebleskivers over. Bake until bottom is golden brown, about 2 minutes.

Transfer aebleskivers to platter. Sprinkle generously with powdered sugar, and serve with raspberry preserves.

    Oh my gosh - I love Aebleskivers and used to make them years ago...haven't for ages so thanks for the nudge. Great lens. I encourage anyone reading this lens to give the recipe a try...yummy! Five stars and a favorite.
