Halibut Season

I can't wait for summer. 

It's the season for fresh caught halibut and salmon here in Alaska. 

Halibut season actually runs February 1st - December 31st but fishing in the winter???  That takes a heartier soul then myself!

You can actually get quite a bit of meat off of your average halibut. It's snow white in color and the taste is not at all overpowering. In fact it is quite sweet. The meat is firm when it's raw but cooks up nicely to a flaky texture.

It is an excellent source of high-quality protein and minerals, low in sodium, fat and calories and contains a minimum of bones.

Halibut is very versatile in the kitchen, as well, with many recipes for baking, broiling, pan-frying, deep-frying, poaching or barbecuing.

Halibut Chowder

Not a Healthy Heart Recipe!

Caution: High fat content. Not on the healthy heart plan!

This is such delicious chowder recipe. I get rave reviews every time I make it. I got this recipe from a dear friend of mine MJ. She's a fabulous cook. She moved to California from Anchorage several years ago. I don't see her as often as I would like. This recipe is so easy even a lazy cook like I can make it.

Halibut Chowder

3 cans cream of potato soup
1 can cream of mushroom soup
4 cups of milk
1 1/2 - 2 Bricks (8oz) of cream cheese
3 potatoes chopped fine - microwave until done
3 large carrots sliced into coins - microwave until done
1 can corn
4-5 Cups of Halibut
8-9 green onions - chopped
3 cloves of garlic
1/2 Cup Margarine or butter

Saute in the halibut, onions and garlic in the margarine.
Warm the milk in a pot to steaming but not boiling
Add the cheese and mix in completely
Add all the soups and simmer 10 minutes
Add all the vegetables
Add all the sauted items plus a bit of black pepper and dill weed to taste.
Mix and simmer 10 minutes

Makes 5 Quarts

You can serve this chowder with some warm home baked bread right out of the bread machine. Oh my!

BOILED HALIBUT

(POOR MAN'S LOBSTER)

Believe it or not halibut is even good boiled. We sometime serve it boiled and refer to it as poor man's lobster. Dip it in a little butter. It's fabulous!

Add 1 teaspoon salt and 1 teaspoon sugar to each quart of water. Bring to boil. Drop in bite sized pieces of halibut. When fish comes to top of water, it's cooked. Serve with melted butter and lemon if desired.

Grilled Halibut Tacos With Roasted Tomato & Tequila Salsa

These are so easy and so good! And the fish and the salsa can be made ahead. If you like very spicey salsa, add more chipotle. But be careful--chipotles in adobo are HOT!

30 min 30 min prep

For the Halibut
3/4 lb halibut
salt and black pepper
1 tablespoon vegetable oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon orange juice

For the Salsa
1 beefsteak tomato
1/2 red bell pepper
1 garlic clove
1/4 onion
1/2 chipotle chile, diced (canned in adobo)
1 tablespoon olive oil
1/4 cup cilantro leaves, chopped
1 lime, juice of
1/4 cup tequila
salt and black pepper

For the Tacos
8 corn tortillas
1 bunch cilantro
2 limes, wedged

1. For the Halibut:.
2. Heat a grill pan on high heat.
3. Season the fish with salt and pepper.
4. Rub the grill pan with vegetable oil.
5. Place the halibut in the hot pan and grill for 4 minutes before turning to grill the second side.
6. Baste the fish with the citrus juice.
7. Turn the fish and continue to grill until cooked through.
8. Remove the fish from the pan and allow to cool.
9. Flake the fish and side aside while preparing the salsa.
10. For the Salsa:.
11. Heat a Pan on medium heat.
12. Place the tomato, pepper, garlic clove, and onion in the pan.
13. Dry roast the ingredients for 8-10 minutes or until lightly caramelized.
14. Combine dry roasted ingredients, chopped chipotle pepper, olive oil, cilantro, and lime juice in a quart container in blender and process until smooth.
15. Mix in the tequila and season with salt and black pepper.
16. To assemble:.
17. Divide the flaked halibut onto the corn tortillas.
18. Spoon salsa onto the fish.
19. Top with cilantro and lime juice.
