Nothing beats a good book!
Drawing Realistic Textures in Pencil
This is one of the best books on rendering realistic textures in graphite/charcoal and is a must for any serious pencil artist. JD Hillberry is a brilliant pencil artist and I think this is one of the best book's available, although it is not a 'how to draw' book for the beginning artist, it does teach you how to achieve strong realism.

Color pencils are a challenging medium but if you want to learn how to create realistic skin and hair tones, you can't go past Ann Kullberg's Portraits book. It truly is step by step with excellent, clear instructions all the way through.
