Quick and EASY creamed spinach recipe...a MUST see!

So, can anyone tell me what would complete a picture perfect roasted chicken fully equipt with stuffing and a great glaze? Or a steak seared on the barbie and a fresh baked potato? Anyone? Alright, alright, I'll tell you...an AMAZING side dish!!!!! It can't be too over-powering, too hot, too sweet, too thick or strong. And if you're still interested at this point, stay in tuned and i'll help you make a great Creamed Spinach dish. =]

The how-to and know-how

on a family favorite

Ingredients you need to go out and get:

* 3-4 bunches of spinach (bunches = bound with a rubber band)

* A bunch of green onions

* 2/3 c. or regular or low-fat sour cream

* 1/4 c. of your choice of milk

* 2 Tbsp. of butter or spread

* Salt and Pepper to taste

Directions:

1) Wash spinach to get all the dirt off and shake em' dry! Then, take the stems off and throw them away (if you have kids that want to help, this would be a great thing for them to do with you!)

2) Get a pot and put about an inch or so of water in it. Put it on Medium-High heat and using either a metal steamer pod -or- use a metal collander and cover for 2-3 minutes.

**TIP** Steam spinach in about 3 groups...you can attempt the whole thing at once, but in sections is easier!

3) Put the spinach on a cutting board and let it cool. Then use a knife or a pizza cutter to cut the spinach into little pieces. Also, cut up your green onions into little peices.

4) Put the sour cream, milk and butter in a saucepan and stir over medium heat until the butter melts. When the butter is no longer in clumps, add the onions and spinach.

5) Leave over Medium heat for about 6 minutes, and keep stirring!!!

6) Salt and pepper to taste

7) ENJOY!

A little bit about me

As a mom and a housewife, cooking is in my repetoire. Both occupations are new to me, but with a little help from the Food Network, my grandma's old Betty Crocker Cookbook and a personal twist, it's all kind of "coming to me".

I enjoy cooking, ready, eating, enjoying time with my husband and my daughter (and our dog, Chewy) and trying new things.     I have never tried spinach this way but it sounds wonderful! I want to try it! Lensrolled to some of my food lenses.
