Native Australian Food, or 'Bush Tucker' is the term for food made using ingredients that are native to Australia. For thousands of years, the indigenous people of Australia have used native flora and fauna for food and we are only now starting to discover how to use them in modern cuisine.

Lemon Myrtle - lemon myrtle occurs naturally as a large shrub to medium-sized tree (3-30 m) mainly in rainforests of coastal Queensland from Brisbane to Cairns. It is well known as an ornamental with abundant flowers and fragrant lemon-scented leaves. The leaves are used fresh or dried & ground and have a lemon & lime oil flavour. They can be used with baked fish, to make a lemon tea, breads, cheesecakes, chicken and rice dishes and sauces. Add a roughly shredded leaf to cooked rice to accompany a curry.
