Tips on Making the Best Chocolate Chip Cookies
1. Use a newer, lighter colored, non-stick pan to prevent burning the bottoms of your cookies.
2. Use a little more flour than the recipe calls for if necessary. There's nothing worse than a flat cookie.
3. Let your cookies set for 30-60 seconds before transferring them to a cooling rack.
4. Always, always use fresh ingredients.
5. Be familiar with your oven's heat. Turn up the heat if things cook too slowly.
6. Watch your cookies carefully the last few minutes. Take them out when they are starting to brown on top. Don't let them bake too long.
7. To keep your cookies soft, store with a slice of bread.
The Best Chocolate Chip Cookie Recipe
Chocolate Chip Cookies
1 tsp. salt
1 tsp. soda
2-1/2 C. flour
1 stick butter-flavored Crisco
3/4 C. brown sugar
3/4 C. white sugar
1 tsp. vanilla
2 eggs
1/2 bag semi-sweet chocolate chips
Optional: 1/2 C. chopped walnuts
In a small bowl, combine 1 tsp. salt, 1 tsp soda, and 2 -1/2 cups of flour. In a large bowl, combine 1 stick of butter flavored Crisco, 3/4 cup brown sugar, 3/4 cup white sugar, and 1 tsp. vanilla. When smooth, add 2 eggs and beat until creamy. Gradually add the flour mixture. Add 1/2 bag of semi-sweet chocolate chips. (You can add the whole bag, but using half a bag is plenty and stretches your chips!) Add 1/2 cup chopped walnuts if desired. Bake at 375 degrees for 10-12 minutes (depending on your oven).

New Chocolate Chip Cookie Recipe
Peanut Butter Smore Cookies
Extremechocolate.com has a new recipe. These peanut butter s'mores just might be among the best chocolate cookie recipes ever.
Ingredients:
-1/2 cup butter
-3/4 cup brown sugar
-1 cup peanut butter
-1 egg
-1 tsp vanilla
-1/4 tsp baking soda
-1 cup flour
-4 chocolate bars that break into squares (such as Jersey Milks)
-about 25 large marshmallows
Blend the butter and sugar. Add peanut butter, egg, and vanilla. In a separate bowl, mix the baking soda and flour, then add them to the wet ingredients.
Roll the dough into balls and bake them for 8 minutes on an ungreased cookie sheet at 375. They won't be set after eight minutes, but take them out anyway. While they're cooking, cut the large marshmallows into half. Press a marshmallow half into each cookie, then return them to the oven for 3 minutes.
Take them out, press a chocolate square into each, and you have the easiest and most delectable of chocolate cookie recipes: peanut butter s'mores!
History of Toll House Cookie Recipe
Ruth Wakefield and the Toll House Inn
Ruth Wakefield prepared the recipes for the meals served to the guests at the Inn and gained local notoriety for her deserts. One of her favorite recipes was for Butter Drop Do cookies. The recipe called for the use of baker's chocolate and one day Ruth found herself without the needed ingredient. She substituted a semi-sweet chocolate bar cut up into bits. However, unlike the baker's chocolate the chopped up chocolate bar did not melt completely, the small pieces only softened.
As it so happened the chocolate bar had been a gift from Andrew Nestle of the Nestle Chocolate Company. As the Toll House chocolate chip cookie recipe became popular, sales of Nestle's semi-sweet chocolate bar increased. Andrew Nestle and Ruth Wakefield struck a deal. Nestle would print the Toll House Cookie recipe on its packaging and Ruth Wakefield would have a lifetime supply of Nestle chocolate.
