So glad you liked it. I make it at least once a week and it doesn't last more than a couple of days. Enjoy!

in reply to Fire Wife p.s. it works well with muffin pans (watch it, about 1/2 the cooking time), or 4 mini-loaf pans (about 15 mins less than the large loaf). Use the toothpick test but don't mistake gooey banana for uncooked bread!

I made this recipe and it is AWESOME. I have since made it a dozen or so times for home as well as to give, and everyone loves it. 'Moistest' is a good description, which we love. I sometimes use whole wheat flour, and have substituted 1/2 of the butter for applesauce (same measure), since I try to be healthier for our family (within reason, of course!). Typically the whole wheat would cause a dryer bread, but it was just as fabulous. In fact, you don't even notice a difference.
Lastly, I never measure the banana. I use three very ripe, med to large bananas and mash them to a lumpy consistency.
YUM!

Wow, that is fantastic. I am so looking forward to trying this. Could you tell me what a stick of butter weighs? I have a feeling I'm on the other side of the planet, so wanted to check before I tried the recipe. Thanks. Also, would you like to join a new Bread Group? It's at http://www.squidoo.com/groups/bread if you are interested - I hope to see you there.
