About Bual
As with all Madeiras it is produced on the Portuguese island Madeira, and named after the grape type used to produce it. Widely used in cooking, and a favourite of several American presidents, Madeira is traditionally a desert drink.

The Fortified wine
Despite being the drink in which the Declaration of Independence was traditionally toasted, and a favourite of George Washington and Thomas Jefferson, Madeira is not well known in the US today. It has wider support in the international community.

There are a number of suppliers of Madeiras overseas who will ship internationally. They are included here as they have a better range than the US suppliers I have found, includng some rare vintages.
The Drinkshop offers a range of Madeira, from the lower end designed for cooking, up to the higher end vintages.In Europe, a cheaper range of cookuing madeiras, made from Tinta negra mole rather than official madeira grapes, can be bought from Oddbins.
Rare Madeira
Companies like Berry Brothers and Rudd in London (See their Bual Page), Fortnum and Mason and several other shops offer extensive ranges. If you can't get there, then you could try ordering online (they ship internationally) or
who offer a range of rare wines.
Madeira and Sausage Casserole
- Serves: 3-4
- Prep Time: 20-30mins
- Total Time: 2-3 hours
One of the joys of cooking with madeira is that it can give a nice taste to even the most ordinary dish. You don't have to use it for fine dining, or anything that will take more time than you usually would. This recipe is an example of that, but you could simply subsitute it for red wine in your own standard casserole.
Ingredients
- 6 x pork sausages
- 1 x large onion
- 1 x pack button mushrooms
- 3 x large carrots
- 1 x colman packet sauce
- madeira (to taste)
Instructions
1) Cut the sausages to size. Inch cubes will help with even cooking. Add to casserole dish
2) Slice the onion and add to casserole.
3) Peel and wash the mushrooms and add.
4) Wash and peel the carrots, then dice them and add.
5) Make Colemans casserole mix. Follow instructions, and pour over casseole. (See, I said this was a basic recipe).
6) Add Madeira to taste.
7) Slow cook for two hours. This will reduce the alcohol while leaving the flavour.
You could try venison sausages, as Bual is supposed to go very well with venison, but I haven't tried it myself.
