Easy and Delicious Cookies that Start with a Cake Mix!

Something we seem to have less and less of is time. But that shouldn't prevent us from making homemade goodies! You can probably think back of when you were a child, and remember the smell of fresh-baked cookies in your mom or grandma's kitchen. It's a smell even candle companies often try to re-create.

I've found a way to make great homemade and inexpensive cookies with a shortcut - a box of cake mix. It's a great starter for many kinds of cookies, as you will see in the recipes below. Enjoy!

Chocolate Crinkle Cookies

This is my all-time favorite cake mix cookie. It's so easy to whip up, and once people try them they'll be asking you for the recipe!

* 1 package Devil's Food Cake Mix
* 1/3 cup vegetable oil
* 2 eggs
Granulated Sugar

1. Heat oven to 350 degrees. Mix cake mix, oil and eggs in large bowl with spoon until dough forms.
2. Shape dough into 1-inch balls; roll in sugar. Place about 2 inches apart on ungreased cookie sheet.
3. Bake 8 to 10 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack.

Makes about 4 dozen cookies.

Variations:
*Add a gourmet chocolate kiss to the center of each cookie right after they come out of the oven.
*Try any other chocolate cake mix.

Cake Mix Oatmeal Raisin Cookies

* 1 box Betty Crocker® SuperMoist® yellow cake mix
* 1/2 cup packed brown sugar
* 1/2 cup butter or margarine, softened
* 1/2 cup shortening
* 1/4 cup water
* 1 1/2 teaspoons ground cinnamon
* 1 egg
* 2 cups quick-cooking or old-fashioned oats
* 1 cup raisins

1. Heat oven to 375°F. In large bowl, beat cake mix, brown sugar, butter, shortening, water, cinnamon and egg with electric mixer on medium speed 1 minute until smooth. With spoon, stir in oats and raisins.
2. Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheets.
3. Bake 10 to 12 minutes (centers will be soft). Cool 1 minute; remove from cookie sheets.

High Altitude (3500-6500 ft): Bake 12 to 14 minutes.

Makes about 6 dozen cookies.

Double Chocolate Cake Mix Cookies

* 1 (18.25 ounce) package chocolate cake mix
* 1/2 cup butter, softened
* 2 tsp. vegetable oil
* 1 tsp. vanilla extract
* 2 eggs
* 1 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, stir together the cake mix, butter and eggs until smooth and well blended. Mix in the chocolate chips. Drop by spoonfuls onto ungreased baking sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Makes about 3 dozen cookies.

Variations: Try other flavor caked mixes (e.g. Strawberry cake with white chips, Spice cake with gourmet nuts, etc.)

Cake Mix Rolled Sugar Cookies

* 1 box Betty Crocker® SuperMoist® white cake mix
* 1/2 cup shortening
* 1/3 cup butter or margarine, softened
* 1 teaspoon vanilla or 1/2 teaspoon almond extract or lemon extract
* 1 egg
* Sugar
* 1 cup Betty Crocker® Rich & Creamy vanilla frosting
* Food colors

1. Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, shortening, butter, vanilla and egg with electric mixer on low speed 30 seconds, then on high speed 1 minute.
2. Divide dough into 4 equal parts. Roll each part 1/8 inch thick on lightly floured cloth-covered surface with cloth-covered rolling pin. Cut with 2 1/2-inch cookie cutters into desired shapes; sprinkle with sugar. On ungreased cookie sheet, place 2 inches apart.
3. Bake 5 to 7 minutes or until light brown. Cool 1 minute; remove from cookie sheet to cooling rack. 4. In microwavable bowl, microwave frosting uncovered on High 20 to 30 seconds or until melted; stir. Frost cookies.
5. Stir together small amounts of water and food color. Paint colors on freshly frosted cookies, using fine-tip brush, then swirl colors with brush or toothpick to create marbled designs.

Dry completely before storing.

Makes about 4 dozen 2 1/2 inch cookies.

Cake Mix Peanut Butter Cookies

* 1 box yellow cake mix
* 1/4 cup packed brown sugar
* 1/3 cup water
* 1 cup creamy peanut butter
* 1/4 cup shortening or vegetable oil
* 2 eggs
* Granulated sugar

1. Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, brown sugar, water, peanut butter, shortening and eggs with electric mixer on medium speed until smooth.
2. Shape dough into 1-inch balls. Roll in granulated sugar and, on ungreased cookie sheet, place 2 inches apart. Flatten in crisscross pattern with fork dipped in sugar.
3. Bake 10 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.

Makes about 54 cookies

Variations: You can always add your favorite chips or candies to jazz up the recipe.

    Thanks for this awesome recipe of the chocolate crinkle cookie, I really love it! And yes, I'm quite a sucker for fresh-baked smells from my mother's kitchen when I was just a child. The crinkles can be perfect wedding favors.
