Caribbean Food Recipes Made Easy

Tucked away between North and South America covering a range of over 26 islands, the region with its population drawn from all over the world has a cuisine that in my opinion is one of the tastiest and exciting.

I grew up with a grandmother whose world revolved around food. It had to be fresh, organic and pretty to the eye. My grandmother, therefore instilled in me a love and appreciation of good healthy tasty food and I am forever grateful for what she shared with me.

Caribbean food is one of the great secrets of the food world but not for much longer!

My Favourite Caribbean Dishes

  • 2Sweet Potato & Callaloo Pie
  • 3Jerk Tofu & Stir Fried Caribbean Vegetables
  • 4Vegetable Rundown & Rice & Peas
  • 5Sweet Potato Pone
  • 6Rum Punch
  • 7Fried Plantain (with everything)

Classic Rice & Peas

Simple & Delicious

Ingredients
400g Dry Basmati Rice
250g Dried Red Kidney Beans (soaked overnight)
300g Coconut Milk
50g Olive Oil / Butter
4 Escallion stalks / Spring Onions (finely chopped)
1 Sprig Fresh Thyme
1/4 Scotch Bonnet (de-seeded)
Ground Black Pepper to taste
Sea Salt to taste

1. Place the peas in a large saucepan with enough water to cook on a low heat for 1 1/2 hours or until tender.
2. In a separte pan heat the Olive Oil or Butter and sweat the Escellion / Spring onions before adding to the beans.
3. Add the Coconut Milk, Thyme, Scotch Bonnet, Black Pepper and Salt and bring to the boil before reducing the heat and cooking for a further 20-30 minutes or until all the liquid is abosorbed and the rice is tender.
4. Before serving remove the Scotch Bonnet and fluff up the rice.

Note: Scotch Bonnet is a hot pepper and best handled with caution.
