Red Leaf Cheddar
The red maple leaf has been Canada's national symbol for the past 150 years. It is a tribute to the country's natural beauty and sheer vastness. This Canadian cheddar, which hails from a country where maple syrup production reigns supreme, proudly bears the red maple leaf. Because Canada was a part of the British Empire, cheddar has always been popular there, especially after local production accelerated in the mid 1800's. Our Red Leaf Cheddar is the result of 150+ years of cheddar making expertise. It comes to us in 40 pound blocks, each aged over 12 months. Soft on the palate, yet tangy, this cheddar is different than English cheddar in subtle ways. It is quite nutty, with a beautifully sweet aftertaste. Red Leaf Cheddar is a truly exceptional cheese by any measure.

Fiery Spice Cheddar
As masters of the art of savory cheese blends -- from Harissa Spice to Thai Curry Cheddar -- English cheesemakers are always on the lookout for a twist on their standard Cheddars, and they have found it in Fiery Spice. This cheese is not a generic Cheddar with a few jalapeos tossed in, but rather a flavorful mature English cheese kicked up with green and red bell peppers, green and red chili peppers, crushed chili and garlic.

Goat Cheddar by Cypress Grove
From Cypress Grove Chevre, the makers of our beloved Humboldt Fog, comes this aged goat's milk cheddar. Sharp and smooth, this cheddar is aged a minimum of one year, giving it a complex, nutty flavor. Off-white in color, as opposed to the yellow of the cow's milk variety, Cypress Grove Goat Milk Cheddar is not overly "goaty," although the chevre is discernable. It is a great way to broaden your cheddar experience!

Jalapeno Cheddar by Cabot Creamery
As it was early last century, Cabot is still a sleepy little farm town tucked into the rocky soil of Northern Vermont's rolling hills. Located there is the Cabot Creamery, a dairy cooperative dedicated to creating world-class cheddars while supporting the hard-pressed independent farmers who supply their milk. Established as a cooperative in 1919, the dairy farmers actually own the company! This delicious Jalapeno Cheddar is spicy enough to satisfy the heat-seekers, but still allows the quality of the cheddar taste to shine through. The great news for weight-watchers is that this tasty treat has only 50% of the fat of other cheddars. Terrific on burgers, grilled cheese, quesadillas, this cheddar will liven up lunch sandwiches and salads too.

Cheddar, Cheddar and More Cheddar
Pub Cheddar by Hendricks Farms
Hendricks Farms and Dairy is an outgrowth of the Hendricks' family homestead plan of feeding our family the most wholesome and healthiest food possible. Working in harmony with nature, they can now offer others the same opportunity. What makes Hendricks Farms and Dairy a reality is the support of customer and friends who share the passion and vision of the Hendricks Family. Each cheese is raw milk, made from humane-certified, grass-fed cows. Hendrick's bandage-wrapped cheddar is a sharp-tasting, raw milk cheese that can easily stand up to strong stouts and bitter ales. Firm, but not overly sharp, Pub cheddar tastes very creamy on the palate. This has a salty snap that gives way to flavors of hay, pine nuts, lemon peel, garlic, and oak. Don't let the name fool you, this pub cheese is all class.

Irish Green Wax Mature Cheddar
Green Waxed Cheddar is produced by Tuxford and Tebbutt from pure Irish milk. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". Here, the winds blow in from the Atlantic, depositing rain throughout the year, providing the perfect growing conditions for lush grazing. This environment produces rich, creamy milk that is perfect for cheese making. Our Irish Green Wax Cheddar is aged for a minimum of 12 months, but may be aged longer as it is only when that distinctive strong Irish cheddar flavor is ready that Tuxford and Tebbutt's master grader will deem the cheese ready for sale. The cheddar is then cut into blocks and covered in green wax, giving the cheese a distinctive Irish appearance.

Keen's Traditional Unpasteurized Cheddar Cheese
Igourmet presents the winner of the 2005 Best Mature Traditional Cheddar in the World. The Keen Family has been making delicious cheddars since 1899 at Moorhays Farm near the Blackmore Vale in Southwestern England. This West Country Farmhouse Cheddar cheese matures for more than 12 months to perfection, occasionally growing blue veins at the edges. The cheddars are regularly turned and sampled to ensure that each achieves a unique, subtle, nutty flavor. Keen's Traditional Cheddar is a West Country Farmhouse Cheddar, part of an exclusive list of British foods protected by a Protected Designation of Origin (PDO). West Country Farmhouse Cheddar can only be made in Dorset, Somerset, Devon, and Cornwall Counties. Keen's Cheddar is one of these selected few.

Quicke's Traditional Mature Cheddar
Cheddar was invented in Somerset, England in the 15th century on a dairy farm near Cheddar Gorge. It was a favorite of Queen Elizabeth the first and one of the gastronomic delights of court. Cheddar quickly became a part of the staple diet; great hunks of it eaten with bread and washed down with strong ale. The recipe was later taken to the U.S.A., Canada, New Zealand, Australia, and to anywhere else that the English emigrated. Good cheddars can be made elsewhere, but the best cheddars in the world still come from Somerset and the neighboring counties of Devon and Dorset. Quicke's Traditional Mature Cheddar is handmade on a simple farm near Exeter in Devon. Aged for 12 months, it is a full-bodied, buttery cheese that is quite sharp and utterly divine.
