The Chicago-style "deep-dish" pizza was invented at Pizzeria Uno, in Chicago, in 1943, reportedly by Uno's founder Ike Sewell, a former University of Texas football star. However, a 1956 article from the Chicago Daily News asserts that Uno's original pizza chef Rudy Malnati developed the recipe.

The pizza begins with a simple, thick layer of dough (made with olive oil and cornmeal) that is laid into a deep round pan and pulled up the sides, then partially baked before the toppings are added to give it greater spring; the pan is generally oiled heavily in order to create a fried effect on the outside of the crust. The crust is covered with cheese (generally sliced mozzarella) and covered with meats, usually in a solid layer, or patty, just above the crust, Italian sausage (a Chicago staple), as well as vegetables such as onions, mushrooms and bell peppers. A sauce, usually uncooked, of crushed or pureed tomatoes is then added. Typically this is finished with a grated cheese blend. On the usual pizza, about a pound of cheese is used. Deep-dish pizza is usually eaten with a knife and fork, since its thick gooeyness makes a slice of pizza larger than eight or ten inches messy to eat with the fingers.

Besides Uno, famous deep-dish restaurants include Uno's companion restaurant Due, which was opened just down the block by Sewell in 1955. However, a year before, in 1954, the Original Gino's Pizza, located on Rush Street, opened its doors, and 12 years later in 1966, Gino's East opened. Other deep dish restaurants include Edwardo's, Connie's, Giordano's, Carmen's, Bacino's, Pizano's, (which is owned by Rudy Malnati's son, Rudy Jr.), and Lou Malnati's. Lou Malnati's was founded by another of Rudy Malnati's sons. It is now run by his grandsons and has 26 Chicago area locations.

Chicago deep-dish pizza is famous throughout the world. Accordingly, many Chicago deep-dish pizza restaurants will ship their pizzas, partially baked, within the continental U.S.

My personal experience

Living in Chicago all of my life, I have tasted quite a lot of different styles of pizza from almost all of the Chicago area pizzerias. Over time, I have developed a certain taste for certain styles of our local pizzas. For over forty-five years we have bought pizzas from Home Run Inn and Connie's on the south side to Father and Son's and Lonnie's up north and a lot of places in between. As Chicagoans, we develop a loyalty for a certain pizzeria and tend to order from that particular pizzeria or restaurant most of the time. We locals tend to mostly stay in our own neighborhoods rather then go downtown to one of the famous name pizzerias that most of the tourists and suburbanites enjoy going to. Don't get me wrong, we also love the famous name pizzerias but they are not a priority when ordering a pizza for dinner on a Friday after work. But one great advantage is that some famous name pizzerias also have neighborhood locations throughout the Chicagoland area. Each pizzeria is known for their landmark pizza, be it a deep dish, or a stuffed, or pan pizzas, to the regular or thin crust. When living in Chicago, it all boils down to personal preference.

Uno Chicago Grill - Original Chicago Deep Dish Pizza
The first Uno's was established in 1943 by former University of Texas football star Ike Sewell and his friend, former WW II G.I. Rick Ricardo, in the River North neighborhood of Chicago, Illinois. While Sewell and Ricardo are known as the owners of the original restaurant, a 1956 article from the Chicago Daily News asserts that the original recipe was created by chef Rudy Malnati, the father of Lou Malnati. Pizzeria Uno claims to have originated the deep dish pizza, or pan pizza.
Gino's East Pizzeria
For Chicago style pizza, both deep-dish and thin crust. In 1966 two Chicago cab drivers, Sam Levine and Fred Bartoli, became disgusted with the rush hour traffic and decided to quit hacking around. With the help of George Laverde, they went into the restaurant business.
Giordano's, Chicagos World Famous Stuffed Pizza
Giordano's is a pizzeria that specializes in Chicago-style pizza. The company started in 1974 after the owners, brothers Efren and Joseph Boglio, Italian immigrants, were discouraged at the lack of authentic pizza available in the Chicago area. The company's slogan is "Chicago's World Famous Stuffed Pizza." Giordano's is one of the creators of the stuffed pizza.
Aurelio's Pizzeria
Aurelio's Pizza was founded in 1959 by Joe Aurelio, Jr. who, at age 26, opened a small, 4 table restaurant on Ridge Rd. in Homewood. By 1977, Aurelio's had grown so popular that they opened the world's largest pizzeria near its original store in what was formerly a 12,000-square-foot (1,100 m2) industrial warehouse.

Home Run Inn Pizzeria
In 1923, Mary and Vincent Grittani owned a small bar on the South Side of Chicago. When a home run from a nearby baseball game was hit through the tavern's window, the couple decided to rename the tavern Home Run Inn. In the 1940s, the famous pizza recipe was developed and perfected. From there, the franchise expanded into frozen pizza, and several new locations were opened.
Lou Malnati's Pizzeria - Chicago-Style Deep Dish Pizza
Lou Malnati began working with his father Rudy in the 1940s making deep dish pizza. In the 1950s, he co-managed Pizzeria Uno with his father. Lou and his wife Jean opened the first Lou Malnati's Pizzeria on March 17, 1971 in Lincolnwood, Illinois. As of October 2007 Lou Malnati's owns and operates 27 stores in the greater Chicago area.
NANCY'S STUFFED PIZZA
Italian immigrants Nancy and Rocco Palese opened their first pizza parlor in 1970. Deciding to add pan pizza to the menu, Rocco returned to Italy to obtain his mother's recipe. Next, he began experimenting, testing variations on their recipe, and finally in 1971 the STUFFED PIZZA was born!
Rosatis Chicago Style Pizza, Deep Dish Pizza
Rosati's Pizza was founded by Sam Rosati, the son of Ferdinand Rosati, an Italian immigrant, who had been in the restaurant business since 1898 in New York. Sam opened his first Rosati's Italian restaurant in 1927 with pizza as an appetizer. The first official Rosati's Pizza locations opened its doors in the 1959 and 1964, after Sam's children took over the family business and moved the operations to the suburbs. They later franchised the company in the late 1970s.

    We are from Chicago. I like Lou Malnati's the best! It is still family owned and Chicago based. Their ingredients are consistent. Uno's menu and ingredients vary from state to state.

    I knew I shouldn't open up this lens but I had too... it was calling me! I miss Chicago pizza soo much I can not even tell you. I have ordered from Lou's and Gino's but they are not the same as Fresh.... oh sad face... missing pizza!! Best pizza place out here is Pizza Hut!! Enough said.

Its not really the season for pizza as I've got Christmas cookies to bake this afternoon, but you've got me hungry for some Lou Malnati's.
