Chicken Marsala

Simple, tasty & elegant!!

Ingredients:
Chicken breasts
Marsala wine (get at liquor store)
Mushrooms
Onions
Kens Balsamic viniagrette dressing
garlic salt/pepper
freshly shredded parmesan cheese
Bread crumbs

1st
Cut chicken breast in half. Marinate in Balsamic dressing. Mix in bowl: bread crumbs, salt & pepper (to taste) & finely fresh shredding parmesan cheese.

Add marinated chicken to bowl of bread crumb mixture to coat. In frying pan (spray with cooking oil & add some extra virgin olive oil to bottom, Start cooking chicken.

Add marsala wine as chicken cooks & it will pick up the flavor of the wine. Turn over & cook both sides until golden brown & continue adding Marsala whenever the pan juices go dry. Remove from pan onto plate. I also add a dash of the balsamic dressing to add a little zing during this process. Remove chicken from pan.

Saute finely chopped mushrooms & coarsely chopped onions in olive oil/marsala wine mixture. Season with salt & pepper. Serve directly on top of chicken.

I put this chicken on the plate, fine/thin asparagus that I steam & put next to it & serve with bow-tie pasta.
6. BOW TIES:
I cook the bow - tie's (farfalle), drain & add freshly chopped garlic, real butter, salt/pepper & freshly shredded parmesan cheese. Lots of all of this stuff added for flavor!!
(hand held cheese grater is great for this task).
