List of Ingredients
2 Cans Chicken Broth
4-5 Cups Water
4 Carrots Sliced
4 Celery Stalks Chopped
½ Large Yellow Onion Chopped
3 Garlic Cloves Minced
2 Teaspoons Ham Stock (or 2 Pieces of Deli Smoked Ham)
1 Tablespoon Vegetable or Corn Oil
1 Tablespoon Italian Seasoning
1 Teaspoon Fresh or Dried Parsley
2 Bayleaves
1 Teaspoon to 1 Tablespoon Sea Salt Depending on Taste
1 Teaspoon Coarsely Ground Black Pepper
¼ Teaspoon Cayenne Pepper (optional)
1 Cup Rice or 1 Cup Pasta
* While chicken breast meat is recommended as it is the healthiest, you can substitute dark meat or use a deboned whole chicken if preferred.

Preparation Instructions
In the last 20 minutes or so while chicken is boiling, chop or slice vegetables and mince garlic.

When the chicken is done, it is best to remove the pot from heat, remove the chicken from the pot to a plate and allow the chicken to cool sufficiently to avoid burning ones self. However, I must admit to not always doing this. I usually just use two forks and pull the chicken apart in the hot pot although I do turn the heat off. If you do this, BE CAREFUL! Hot chicken soup when applied to the skin is NOT a cure for anything that I am aware of!
OK, so now that you have the chicken significantly shredded to your taste, add the chicken back to the pot. Now add the vegetables, ham or ham stock and seasonings. Bring to a rolling boil and then reduce temperature to simmer. Cook on simmer for 1 1/2-2 hours, adding 1 cup of rice or pasta in last 20-30 minutes of cook time. And, keep an eye on the water--sometimes it is necessary to add another cup or so if the soup cooks down too much.
Serve with toasted garlic bread and ENJOY!!!!
