Step by Step Instructions!
I am going to show you how easy it is to make this
home made Chocolate Pie
home made Chocolate Pie
Items you will need to make & Bake this!
First off you're going to need a double boiler pan;
A good one that my family has used for many many years
is the Revere Ware Stainless steel Double boiler;
I am adding some photo's of them from various sites
there are many styles to choose from, and prices do vary;

imagine myself ever using anything but this one;

My Families Favorite pies
Ok now that we have our Double boiler pans, and we
know for sure what the heck I'm talking about you are
ready, put some water in the bottom pan, turn on heat
about low-medium heat;
I'm going to type out your ingredients and then tell you step
by step of what to do;
if you make your own pie crusts, great do this first;
with my arthritis I cheat these days I buy those
nice pre-made pie crusts I use the Pillsbury DEEP DISH
pie crusts; Follow directions on package;
THIS MAKES ONE 9" CHOCOLATE PIE, double the recipe
if making two; we always made TWO OF THEM!!!
SO AGAIN BE SURE TO DOUBLE THIS RECIPE FOR TWO PIES!!!!
Single pie
3/4 cup sugar
3 Tablespoons Cornstarch
3 Tablespoons Flour
1/2 tsp salt
set this aside in small mixing bowl
once you turn the heat on for your double boiler
add 2 1/2 cups milk, this needs to start heating up
so that once you add the above ingredients it will start
to thicken up;
You'll also need;
2 oz. squares of Unsweetened Baker's Chocolate
2 egg YOLKS (Well Beaten)
1 tsp. vanilla
ok now that your milk has been on the stove and is
starting to heat up you can now slowly add some of
the mixture up above into the heating milk, stir
and keep stirring and adding the rest of the flour
sugar & salt after this heats up for a few minutes
it will start to thicken keep stirring, be sure to
stir out those clumps that form, as the mixture
really starts to thicken up add your 2 squares of chocolate
we usually cut up these pieces a bit to help speed up
the melting process so add this to the mixture stir, stir
some more make sure to NOT let it scorch in the bottom
of your pan now; Keep stirring once this really thickens
up you are ready to add your 2 beaten egg YOLKS, once
the egg yolk hits this hot mix you need to stir it in
really fast and really well otherwise you'll get fried egg
or pits of like scrambled egg with your chocolate you don't
want that to happen EWWW! SO stir it up fast and really quick-like. remove from heat take the INSERT PAN out of
the bottom pan;
You will probably see small clumps here and that happens
not to worry, I use a nice handy blender to beat out
those stinky little annoying clumps, see photo below
this works GREAT just for this purpose! Most cooks have one
and if not you can get a really nice one cheap at any Walmart
or other place you shop at;

Now that your pie crusts are done
finishing up our pie
Ok You've got the hardest part done now, you've got the
chocolate all mixed up in your pan, you've used this nice
hand held blender to beat out those pesky clumps that happen
no matter how much you stir and stir; Now add the 1 tsp. of
Vanilla stir this in with your spoon, and do a taste test
right now, its so darn good Heck its even good to taste before
you add the vanilla but I do prefer it with VANILLA (G)!
yep its so good you need to taste it again;
now you are ready to get your meringue ready for this;
My family always tops this sort of pie with Meringue
very simple to do here;
MERINGUE FOR ONE PIE;
3 egg WHITES ( room temperature)
1/4 tsp. cream of tartar
6 Tablespoons of sugar
depending on your egg size you can even add one
or two more EGGWHITES to this mix ( use your
own good judgement) we use more! WE like a nice
piled up Meringue on our pies.
Use your mixer to beat up the Egg whites
now, slowly add in a little sugar at a time;
scrap around the bowl to make sure everything
is getting mixed in with the beaters, keep
adding your sugar a little at a time until
the Meringue is thick enough to start
forming "peaks" there in your mixing bowl
Pour in the chocolate into your baked pie shell
if the chocolate mix is still hot, that's alright
just put it in your pie shell, next pile up
the meringue smooth it out to the edges of your pie crust
and try to do some fancy little "peaks" on your pie;
and if you can't master that , who cares LOL!
Bake in your preheated oven at 350 degree's;
until you get a nice pretty look on your pie,
Don't leave them in too long now takes maybe 5 minutes
or less?? Just keep an eye on it, and "brown" the meringue
to where its set and pretty looking;
take out your masterpiece, let it cool off
set it in your refrigerator to chill for a couple
of hours and serve when ready;
TIS AWESOME!!! and I do highly Recommend this recipe!

- Yeah very dangerous but have printed out the recipe for later when it's ok to go crazy on all sweet stuff again. I can't wait to try this chocolate pie. Is it ok to add nuts to it? I love chocolate with cashew or almonds.
