The history of coffee
Where did it come from and why? I mean, who actually baked the first bean?

The story of coffee begins some time in the 9th century in Ethiopia where beans were cultivated by Ethiopian Highlanders. Coffee expanded it's reach into Northern Africa through Arab traders. For the first time, Coffee was mass-cultivated and the humble beans began their first circle of the globe by entering the Indian and European marketplaces.
Coffee's first stop in Europe was Venice, Italy during the 15th or 16th centory, brought in by Venetian merchants who traded heavily with the Muslims of North Africa across the sea. Coffee and it's cousin Cocoa became the exclusive drinks of the wealthy. Coffee was spread across Europe and to the Americas by the French colonists who founded coffee plantations in the West Indies.
In the early 1700's, coffee seeds were smuggled into Brazil and a hundred years later, Brazil would cultivate coffee as a commercial commodity. Coffee became a drink of the masses instead of the wealthy. For many years in the 19th and 20th century, Brazil was the world's largest producer of coffee and had almost a monopoly on the trade.
Today, Colombia, Guatemala, Nicaraqua, Indonesia and Vietnam all have large scale productions of coffee.
Though coffee is grown all over the world, each region offers a unique and different taste to the world's favorite beverage.
Where does coffee come from?

Caffeine is extracted from the Green Coffee Beans either through a process using CO2 or through using a type of oil or ethyl acetate to extract the caffeine from the bean. Even with the best extraction method, about 1% caffeine remains.
Green Coffee Beans are roasted and it is this process which brings out the flavor and aroma in the bean. Green Coffee Beans can last up to a year and are the best option for those who have the ability and choose to roast the beans themselves so that they can control the flavor characteristics.
Roasted beans should be kept in a pressurized canister or foil-lined bag. Roasted beans are best consumed within a week but can last up to a month with fairly good flavor.

Coffee drinking can lower your risk of Type II Diabetes, Parkinson's Disease, Oral Cancer, Colon Cancer, Asthma, Headaches and may even lower your risk of Cardiovascular Disease.
Coffee is best when fresh ground from the beans but you can have delicious coffee if you just store it correctly in air tight containers.

Studies done over several decades are showing that coffee has amazing health benefits. Whether it's the caffeine or the vast array of antixodiants on board each bean, or some combination of both, coffee can help you be healthy. Studies show that people who drink 4 - 6 cups a day of coffee have 28% less risk of developing Type II Diabetes. Those who drank 6 or more cups a day had a 35% risk reduction.
Women who drink 1 - 3 cups a day have a 24% reduced risk of developing cardiovascular disease according to a Norweigan study.
The anti-inflammatory properties of coffee help to prevent cirrhosis of the liver and liver cancer.
Researchers have found that a typical serving of coffee contains more antioxidants than typical servings of grape juice, blueberries, raspberries and oranges.
Coffee's cousin, Chocolate has been shown to be extremely effective in preventing and control Colon cancer. Studies have shown that a substance in cocoa beans slows the growth of colon cancer by 50 percent. Not only did it retard growth, it damaged most of the colon cancer cells.

K-Cups and Pods
The easiest way to make one great cup of coffee

Perhaps the single most revolutionary event in the world of home coffee brewing was the advent of the Coffee Pods and K-Cup systems. To put it simply, coffee pods are like tea bags with a single serving of coffee sealed in a wrapper. To brew a perfect cup of Espresso or pot of drip, simply remove the wrapper, place the pod where you would normally place your grounds and brew. It's simple, it's easy, it's quick and clean up is easier as you won't end up with spent grounds all over everywhere. Pods are available in both regular and decaf and are sized for home espresso machines or regular drip coffee pots. Make sure you purchase the correct size for your machine.
The K-cup system is a similar system that was exclusively developed by Keurig. Their single cup brewing system uses a pre-packaged sealed cup that fits in easily to the top of the coffee maker. You simply close the lid and turn it on. Clean up is equally a breeze. K-Cups are available in a wide multitude of flavors and by many different coffee vendors. In addition, Tea and Hot Chocolate are also available and are brewed just as easily. K-Cups are primarily a drip-coffee system however they do offer a small cup size with more intensity of flavor which you can use in place of espresso.
Flavored Coffees
Flavored coffee beans typically have been mixed or sprayed with flavoring oils, extracts, powders or liquid during directly after roasting so that the beans can absorb the flavoring and aromas. Medium roast beans are primarily used when creating flavored beans as darker and lighter roasts will not complement the flavorings. Typical flavorings include chocolate, hazelnut, cinnamon, and vanilla although some roasters will even offer beans with fruit and berry flavorings.
As with all coffee beans, flavored beans should be stored in an airtight container in a cool, dark place. Flavored beans can be kept longer than regular coffee beans as the flavoring tends to disguise the aging of the beans and the resulting bitterness.
Using flavored beans eliminates the need for sugar or sugar-free sryups while adding a subtle sweetness and aroma to your coffee.
