Cinnamon Roll Muffins Make You Feel Good

Years ago, my Mom, my sister and me would make a big double batch of muffins to be ready when Dad came in for his afternoon coffee break.

I can still see my dad's big work roughed hands carefully pealing muffin wrappers off several fresh muffins and then he would enjoy them with a cup of coffee.

Those afternoons with the house warm from the oven and the smell of warm muffins will always remain special memories for me.

Homemade Cinnamon Roll Muffins Recipe

Cinnamon Rolls but in a Muffin Tin!

If you love cinnamon rolls and muffins - try this recipe. This was one of Mom's favorite recipes-especially when I made them!

Homemade Cinnamon Roll Muffins Recipe

From the
Rural Route 2 Cookbook


1 cup milk with 1 tablespoon of lemon juice or vinegar added to it
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1 egg
3 to 3 1/2 cups flour
soft butter
sugar
cinnamon

Pour milk into a measuring cup and add the lemon juice or vinegar. Measure the brown sugar, baking soda, salt, vanilla and egg into a mixing bowl. Add the milk. Add the flour. Stir until thoroughly combined.

Turn the dough out onto a lightly floured surface and knead for a minute or so. Roll the dough into a 12-inch by 24-inch rectangle. Spread with butter. Sprinkle with sugar and cinnamon. Roll the dough into a log beginning at the wide side. Stretch the log slightly. Cut into two-inch pieces and put the pieces into greased muffin tins or muffin tins lined with cupcake papers. (I like to use the cupcake papers because the papers make cleaning the muffin tin that much easier!)

Bake at 375 degrees Fahrenheit for 20 minutes or until golden brown.

Allow the muffins to cool for 5 minutes and then remove them from the muffin tins.

This recipe makes 1 dozen cinnamon roll muffins.

    I live in Manila, Philippines for medical treatment. I ran onto this recipe for Banana-Raisin Muffins in a local newspaper. The muffins are nothing short of delicious. It seems the riper the bananas the better. The last time I made them (last week) the bananas were so ripe I almost had to spoon them out of the peels.

    BANANA RAISIN MUFFINS
    (Philippine Daily Inquirer Newspaper)

    3 cups All-Purpose Flour
    1 tsp salt
    2 tsp baking soda
    2 tsp baking powder
    2 cups sugar
    2 cups mashed ripe bananas
    4 eggs, slightly beaten
    1 ½ cups veg. oil
    2 cups raisins (lightly dusted with flour)

    Preheat oven to 375.
    Line 2 12-cup muffin pans with paper baking cups
    Sift together flour, salt, baking soda, baking powder and sugar.
    In another bowl, mix mashed bananas with eggs and vegetable oil.
    Combine with flour mixture.
    Fold in raisins.
    Pour into prepared baking cups, filing each cup about ¾ full
    Baked for 15 to 20 min. or until tops are golden brown. DO NOT OVERBAKE
    Makes about 24 muffins
