The Best restaurant take-away Chicken Fried Rice!
Great for using up cold cooked chicken or turkey or indeed any leftover meat from your roast.
This was the very first dish I can remembering ordering from the Chinese take-away. Mum would pass me the menu and really the only thing I could relate to was fried chicken and rice which seemed a pretty safe bet to me at the tender age of around 11! From the moment I peeled away the silvery cardboard lid, the site of fried egg and slightly coloured slivers of chicken and the odd pea (which I coped with) made my mouth water. It was this dish that I can remember first eating with Hellmans (full fat) mayonnaise ofcourse. Oh how things have changed, I now only allow myself the extra light Hellmans which somehow, just doesn't hit the spot! Clinically proven fat binders
To be honest I'm as skeptical as they come..
I do however, believe a product when it is endorsed by non-biassed third parties. In the case of Proactol; I bought it because it was featured in "The Telegraph" a very respectable daily UK newspaper which certainly couldn't afford to attach it's name to anything that didn't work. Secondly, it was featured on a TV "book camp" style programme as being one of the best ways to naturally and safely absorb up to 28% of your daily fat intake. It is a little expensive however,
I have found that with a combination of light exercise, managing (some of the time) my fat intake and using these tablets I've lost around half a stone in 3 months. I now only take them when I really have over indulged. Click below to see the Telegraph article and to order...
A simple recipe which I return to time and time again
Substitute cold turkey, cooked pork, raw shrimp or even leftover beef!
INGREDIENTS - Serves 4Two cups of sliced cooked chicken
600g cold boiled rice (basmati or long grain) - I prefer long grain
2 eggs - lightly whisked
3 scallions (spring onions), finely sliced on a diagonal, quickly blanched in boiling water.
cup of frozen peas - defrosted
pinch of chinese five spice (optional)
soy sauce
salt
Oil (peanut oil is best) I've found that in order to create a dish restaurant style you need to use quite a bit of oil, eg; two tablespoons here, similar to chicken tikka masala which needs real ghee and plenty of it!
METHOD
1 Coat the chicken strip in the chinese five spice if using - (a good pinch should add enough flavour)
2 In a heavy bottom frying pan, heat the oil. Add the chicken and fry. Remove with a slotted spoon and put to one side.
3 Add more oil and fry the scallions. Remove with a slotted spoon and out to one side.
4. Add more oil and add the egg, "scraping as it cooks so as not to cook too much.
5 Remove rom the heat and add the rice and chicken. Heating through thoroughly. Add the peas and scallions and a dash of soy sauce.
Great with a little mayonnaise (I know it's sounds strange or a good dash of soy sauce - why not go mad and have both!)
