Man has been obsessed with beer and brewing his own beer for centuries with some of the oldest references to beer brewing dating back to 6,000 BC.

By the 14th century, the brewing of beer became commercialized with large quantities of beer being produced by local pubs and monasteries.

However, brewing beer was still considered an art with secret recipes and with each pub or tavern creating their own special blend.

The biggest change in beer history when the industrial industry took beer making out of the small pubs and taverns and commercialized it.

One by one the smaller family owned businesses were taken over by large corporations, and beer was brewed to match the flavor requests of the majority of the consumers (hence the similarities in beer company taste.

Then in the late 1980's micro breweries started showing up. Each with their own unique flavor and body. As micro brewed beer became popular, consumers wanted to go one step further and brew their own beer.

As you might imagine the process is long, time consuming hard to learn, expensive and the results are not always the best.

To help the consumer, beer brewing kits were created. Some of these kits make low quality beer, some make very good beer, and Coopers Brewery with over 100 years of beer brewing history makes an exceptional line of beer types. All easily brewed in your home.

Let's Get Started Brewing Beer At Home

Very Important Information 

The beer making process that I am showing here is much more involved than the recommended instructions.

Creating your beer by following the directions included with your package is much easier and quicker.

I am just showing you examples of how I play around and experiment with different flavors, amount of carbonation and alcohol levels.

I have created my beer many different ways and have actually found that in the long run if you stick to the simple beer making instructions that comes with your Coopers Brewery Kits you'll enjoy the flavors and body much more.

Only after you get used to brewing your own beer then you can start experimenting - not right in the beginning.

Step 1 - Sanitizing the Fermenter (Your Beer Keg) 



After unpacking your box and watching the enclosed DVD, it's time to start making our beer.
The first step is to thoroughly clean and sanitize the beer keg (plastic fermenter) with either household bleach according to the instructions in the enclose booklet or use Coopers Sanitiser.

This is the most important step in the beer brewing process so be sure to santize everything that will come in contact with your beer brewing tools.

Step 2 - Warming the Malt 


Preparing the malt is very simple after removing the plastic lid off of the malt can and putting the yeast packet, place your malt can in a large pot of warm water or in your sink filled with warm water.
This will allow the malt to flow freely from the container when it's time to use it. Allow to sit for approximately 10 minutes

Setp 3 - Adding The Sugar, Yeast, Malt and Water to the Fermenter 

Pour warmed malt into the fermenter, then add brewing sugar and 2 litres of boiling water. Stir until thoroughly mixed. Now fill your fermenter with cold pure filtered or tap water to the 23 litre mark. You have just created wort and your fermenter is ready to be sealed and ready for the brewing process







I suggest that the first time you brew your beer you should follow the instructions exactly. After you have made a few batches you can then experiment with your personal technique.

I personally like to warm the brewing sugar (and water) and also the malt on the stove before adding to the fermenter. This takes longer than the true recipe but it's just something that I got used to

Step 4 - Fermenting Will Begin 

You will now let fermenter sit for 4-7 days at 21-27 degrees Celsius ( 69-80 degrees Fahrenheit)

Step 5, 6 and 7 the Fun Part 

Using the enclosed hydrometer you will check to see if your beer is ready to be bottled.

If it is you will wash your bottles and add the enclosed carbonation drop(s)to each bottle.
Connect the little bottler to the fermenter to fill your bottles. Fill each one up to 2" below the top of the bottle and screw on the cap




Now store your bottles for 7 days at 21-27 degrees Celsius, then an additional 7 days at room temperature.

You may now drink your beer. You can if you like store your bottles longer (up to 3 months) and as it gets stored longer the flavor improves but we can never wait that long. You'll notice that after the 14 day wait you'll taste the freshest, cleanest, most flavorful beer that you have ever tried.

The first time I made my beer it was in the dead of winter and our house temperature dropped below the recommended temperature every night but the batches still turned out great.



The instructions above are just the standard instructions, you can play around with sugar content, different mixing different flavors, but just start off with the instructions in the booklet and on the DVD and let your imagination go from there.

Even if you are use to drinking expensive micro-brew ed beer, you will find that after you try your hand at brewing your own beer, and seeing how great it tastes, you'll never go back to store bought beer again!

Beer Brewing Tip 

In addition to your kit items, be sure that you have common household bleach on hand if you have not purchased Coopers sanitiser.
You will be using the bleach to sanitize your bottles, fermenter and all items that will come in contact during beer brewing.

A major cause of beer failure is not properly cleaning and sanitizing your equipment. Cleaning is extremely simple and takes only seconds, so be sure not to leave out this step.

Customizing Your Beer Flavors 

It's very easy to customize the flavor and alcohol strength of your beer.

However, we recommend that for the first few brewing sessions you stick to the standard recipes, see how the flavor appeals to you for each particular beer type, then you can play with the next batch.

Homemade brewed beer is a delightfully cleaner, crisper flavor than commercial beer and you may find that you won't want to make any changes at all.

I had started off my beer brewing by using products from a different company. With each batch I added additional sugar to add to the carbonation and alcohol content.

So when I brewed my first batch with the Coopers Brewery kit, I automatically added the additional sugar. Once we tried it, I realized that the additional sugar was not needed.

So try your flavors straight first, then you can start to experiment by adding extra sugar, hops, carbonation drops etc.

This recipe produces a beer designed to be chilled and "guzzled guiltlessly" after mowing the lawn or chilling by the barbeque. American Pale Ale Ingredients

5 US Gallons (19 liters)
Coopers IPA beer concentrate kit
1kg Coopers Brew Enhancer 2
500 grams Coopers Light Dry Malt Extract



Step 1-Mix

In a large pot (8 quart minimum), heat 4 quarts of water to just off a boil; then remove from heat. Mix in Brew Enhancer 2 and Light DME.
Mix the contents until dissolved-30 seconds. Empty the contents of the can and dissolve. Be sure to run your spoon along the bottom of the pot to ensure complete mix.

Allow pot to cool to lukewarm (putting it in the sink filled halfway with cold water will speed up this process).
Pour wort into your fermenter, then top up with cold water to the 19 liter mark and stir vigorously. Measure your gravity with your hydrometer.
It should measure between 1.048 and 1.052.

Sprinkle the yeast on the surface and seal.




Step 2-Brew

Ale yeast strains are generally the most reliable for home brewers,fermenting quickly and effectively. Coopers Pure Brewer's Yeast is the most widely used for-home-use beer yeast in the world.

Although ale yeast can ferment at very high temperatures (as high as 40°C/110°F), the closer the brew is to 20°C (71°F) the cleaner the flavor and aroma. Allow to ferment 7-10 days until hydrometer readings are unchanging for at least two days.

Your finished gravity should be in the range of 1.012-1.016




Step 3-Bottle

Bottles need to be primed so that secondary fermentation (producing the gas in the bottle) can take place. We recommend the use of PET bottles or reusable glass bottles designed for storing beer.
Priming Add carbonation drops at the rate of 1 per 375 ml (12 oz) bottle and 2 per 750 ml bottle.

Sugar or dextrose may be used at the rate of ¾ cup per 19 liters. Store the bottles out of direct sunlight at 18°C (67°F) or above for at least one week while secondary fermentation occurs.

Your beer can be consumed after two weeks.
Bottles may be stored (conditioned) for long periods of time (3 months or more).

Conditioning should improve flavor, reduce the size of the bubbles and make the yeast sediment more compacted.
Your American Pale Ale will continue to age well for many months or years.




Step 4-Enjoy

While we recommend leaving your bottles to condition at or above 18°C (67°F) for at least 2 weeks, you may find that your brew benefits from further conditioning.
Ales may be served cloudy or bright-depending on the style-and normally hold less carbonation than
lagers.

A Little Bit of Coopers Brewery History 

It was in 1977 that Maxwell Cooper decided to make the quality of Coopers available to the Adelaide community of homebrewers.

The brewery began providing homebrewers with unfermented wort packaged in a bag.

The beers produced became a source of excitement with brewers across Australia. In 1984, the brewery hit on the idea of concentrating the wort to a malt concentrate to make it easier to deliver to homebrewers outside of Adelaide.

Since John C.G. Cooper had been working with malt concentrates as early as the 1920's, the know-how was already in place. The Coopers Beer Kit as we know it today was born. The Lager, Draught, Bitter, Classic Old Dark, and Stout are each made with the same exacting standards, and in the same way, as Coopers' commercial beers.

Each of these pre-hopped kits are designed, brewed, taste-tested, re-tested and re-tested (for quality control purposes, you understand) to ensure that the homebrewer achieves the same high-quality beers the Coopers Brewery is known for. And they are each packaged with a Coopers brewing yeast that the brewery has used for years.

In 1997 the Coopers Brewery added a new twist to their product line-up by becoming the first brewery to provide homebrewers with a malt concentrate not based on one of their beer recipes that could be used by hobbyist brewers in developing their own recipes.

Providing small-scale craft brewers with a Light, Amber, Dark and Wheat malt concentrate in a syrup form, and a Light DME allows the brewer the freedom of bringing together their own perfect marriage of malt, hops, yeast and water.

In keeping with the Coopers commitment to innovation in the home beer making world, in 2000 Coopers introduced a completely new line of Beer Kits. These kits, called BrewMaster Selection Series, are unique both in their styles and in their stylistic integrity.

By producing a Pilsner, Wheat Beer, Nut Brown Ale and India Pale Ale, Coopers added styles that expand their beer kit line-up beyond those of actual beers made in the brewery.

What makes these kits truly exciting is that for the first time, brewers can use a beer kit that comes with yeast specifically designed for the style of beer being produced.

The Pilsner Beer Kit comes with a unique lager yeast that produces a truly outstanding lager beer while still being fermented at moderate temperatures (65-70'F).

The Wheat Beer Kit includes a wheat beer yeast that creates the lighter refreshing summer style wheat beers of Northern Germany.

Both the Nut Brown Ale and the IPA use a traditional British yeast that produces a clean, crisp British style ale.
