- I made a chuck roast very similar to this recipe but without the red wine. It was still tough - does the red wine tenderize it?

- The red wine should help a little. Letting your roast come up to room temperature before cooking should help as well. Maybe marinade it (usually for steaks but it can help) if that does not help.

- A good recipe that can be used with pork too. I've recently begun putting the veggies in FIRST, then the meat on top and I add onions to the top of the meat. That helps to flavor the vegetables a bit more I think.

- I think your suggestion of putting a prepared crockpot in the fridge for a later date is a good one. I like the idea of spending a little extra kitchen time to get the jump on a few future meals.

- Love Crock Pots! I like to cook pork chops in mine. However, I do have some left-over red wine that I could use to make your Pot Roast.
