Crockpot Vegetable Soup1 litre chicken broth or vegetable broth
3-4 cups of water
2 lrg. pototoes
4 medium carrotts
1 celery stick
3 pieces roasted red pepper +1 small diced yellow or red pepper
1/2 an onion (diced)
1/4 tsp. cayenne pepper
pinch of curry powder
1/2 cup multi-grain or wild rice and 1/2 cup white rice
cornstarch to thicken ( 1 to 2 tbsps.)
other vegetables may be used, whatever you like (turnips, yams, sweet potatoes ect.)
Cut up vegetables in small pieces, dice the onions. Place all vegetables in crockpot. Add broth, water and spices. Set crockpot to cook on slow heat setting for 8 hrs. I ususally add the rice in the last couple of hours of cooking! When it is almost finished mix the cornstarch with a little water and stir this in to the soup! Just helps to thicken a little, if you want a thicker soup add more cornstarch! The roasted red peppers also add to the flavour. Serve with buns or home-made biscuits and your family will be happy campers!

My Favourite Crockpot Pasta Sauce

1 and 1/2 lbs. organic ground beef ( or whatever beef you choose)
1 large can of diced tomatoes
1/2 litre or container of Prego Spaghetti Sauce (this one has amazing flavours)
2 small cans of tomato paste
1 tbsp. of Montreal Steak Spice
Just break up ground beef in crockpot. Add remaining ingredients and stir. Cook for 4 hrs. on high or 6 hrs. on slow. Serve when ready!
P.S. (for extra pizazz sprinkle grated cheddar cheeseor parmesan on top) Enjoy!

Best Cheese Biscuits
All purpose flour 2cups
Baking Powder 4 tsp.
Granulated sugar 2 tbsp.
Salt 3/4 tsp.
Grated sharp (or medium) cheddar cheese 1 cup
Cooking oil 1/3 cup
Milk 3/4 cup
Measure first 4 ingredients into bowl. Add grated cheese, stir.
Add cooking oil and milk. Stir to forma soft ball of dough. Add more milk if needed to make dough soft. Turn out on lightly floured board and knead gently 8 to 10 times. Roll or pat 3/4 to 1 inch thick. Cut with biscuit cutter. Place on ungreased cookie sheet close together for moist sides or 1 inch apart for crisp sides. Dab tops with milk for nicer browning. Bake in 425F oven for 15 minutes until nicely browned. Makes 1 dozen.

Crockpot Soup Recipes
1 1/2 lbs. organic ground beef ( or lean if you like)
19 oz. can (large) red kidney beans
19 0z. can diced tomotoes
1 can tomotoe paste
1/4 container of 1.75ml prego pasta sauce (or your favourite sauce)
19 oz. can chic peas (optional)
1/2 red pepper
1/2 tsp. garlic powder
1 tsp. chili powder
1 tsp. cumin (optional)
ground pepper to taste
Place all ingredients in crockpot and mix together. Slow cook on low for 8- 10 hours. If sauce is too thin remove lid and put crockpot on high for the last hour of cooking. (you can also add another can of tomoato paste to thicken) Enjoy!

- I have a crockpot but have rarely used it. I'm determined to try your veggie soup recipe. Sounds wonderful. I put a tad of sugar in my homemade biscuits too. That really enhances the flavor. Also, hubby loves it when I sprinkle a bit of corn meal in my biscuits.
