Is it dessert or is it fruit salad? With everyone trying to eat a little healthier these days combining fruit with salads has become very popular. There are so many delicious varieties that one can make and share. Experience the rich taste of fruits combined with velvety jello's and creamy textures. I will include a few of my families favourites, maybe they will become some of yours as well. These recipes are perfect for taking to a family gathering, sharing with company or just to add some zing to a meal.



It all starts with Jelly Powder...

Pink Delight

This is about the fastest jello salad I know how to make. Mix together before you head off to work, refrigerate and when you come home it's all ready. I often make it with strawberry gelatin but you could choose any flavour (or colour) that you like!

Pink Delight

1 pkg. strawberry flavoured gelatin (jelly powder) 85 g size
1 cup boiling water
1 cup sour cream

Dissolve gelatin in boiling water in bowl. Beat in sour cream. Use a whisk to do this. Pour into desired mold or fancy bowl. Chill. Serves 4 to 6. I often make double of this for our family!

The sour cream gives it a nice twist! I also add sliced strawberries as a garnish to dress it up too!

Pistachio Salad

This one is my husbands favourite.

Pistachio Salad

Pistachio Instant Pudding Mix (4 serving size)
1 3/4 cups Milk
1 can crushed pineapple, well drained 398 ml
2 cups mini marshmallows (white ones for this recipe)
1/4 cup chopped walnuts (optional)
1 cup whipping cream (the real thing is best)

In large bowl mix pudding powder with milk. Add the pineapple, (be sure it's drained) add marshmallows and walnuts.
In separate bowl whip cream until stiff. Fold into pudding mixture. Chill.

It's delicious as a dessert or as a dessert salad to accompany a meal. This goes fast in our house!

Unique Jello Molds

Jello molds are still popular, my mom likes to use these. As a child I remember having special molds, for holidays. For christmas we had jello molds in the shape of holly leaves and berries, snowman, wreaths. We had a pineapple mold, ring mold, rose mold and I'm sure many others. They add a special touch to bring to the table! Here are some I found on amazon.

Frozen Mint

This is a delightful salad taken from Company's Coming Recipes by Jean Pare. I have made this one several times as well. I served this as a wonderful dessert slice. Pretty and flavourful!

Frozen Mint

A creamy mint delight.

Lime flavoured gelatin (jelly powder) 1 x 85 g
Boiling Water 1 cup

Whipping Cream (or 2 envelopes topping) 2 cups
Peppermint flavouring 1/2 tsp.
Mini marshmallows 2 cups

Dissolve gelatin in boiling water. Chill until syrupy.
Whip cream until stiff. Fold in peppermint flavouring and marshmallows. Fold this mixture into thickened gelatin. Pour into ring mold, tube mold or muffin tins lined with paper cups. Freeze. Cover to store. Serves 8 to 10.

Adding Fruit...

When adding fruit to gelatin be sure to chill the gelatin until very thick otherwise fruits may either float or sink to the bottom of the dish.

Fruit Cups

These are so simple to make, just add berries for a delicious fruit cup.

1 pkg. jelly powder ( any flavour you like) strawberry,raspberry or lime are delicious choices.

1 cup boiling water
2 cups whipping cream
Fruit of your choice...

Pour boiling water over jelly powder and stir to dissolve. Chill until mostly thickened but still stirable.(a few hours) In separte bowl whip the cream until soft and fluffy(not too runny) and fold in to the chilled jello mixture, fold in desired berries. Or just use berries as a garnish on top!
P.S. Raspberries and blueberries work great in this recipe! Enjoy!
