Favorite Diet Plan Recipes - They're Keepers!
Lots of these recipes I would love even if they weren't "diet" recipes! Most of them are very healthy and easy to prepare. I'm starting this page with just a few but will add additional recipes as I go along.
I've cooked dishes from each of the cookbooks you see in this photograph.
So here are some of My Favorite Diet Plan Recipes. Enjoy.
Soft Spread Butter
From Look Good, Feel Great Cookbook by Jenny Jones
This recipe is so easy and so sensible. It's much less expensive than buying commercial soft spreads AND it's made with REAL butter!! You can cut down on saturated fat without sacrificing the taste of real butter.If you try this recipe, I'll bet that you'll never buy commercial soft spreads, again.
That little bowl in the picture is a piece of pottery made by a talented local potter. I love how she created a little slot for the knife. The handle of the knife was created by her husband who turns mostly local woods into beautiful bowls, platters and other beautiful pieces.
This recipe is really good. Here's how you do it:
1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup canola oil
1/4 teaspoon salt
Mix the ingredients well - Jenny Jones uses an electric mixer but I just used a whisk. Put in a plastic tub or dish and cover. You do have to keep this in the refrigerator or it will get really soft but it's spreadable cold so not a problem.

Spice-Roasted Almonds

This recipe includes two of the choice ingredients of any Sonoma Diet recipe - olive oil and nuts.1 tablespoon chili powder
1 tablespoon extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground black pepper
2 cups whole almonds
Preheat oven to 350 degrees F. In a medium bowl combine chili powder, olive oil, kosher salt, cumin, coriander, cinnamon and pepper; add almonds and toss to coat. Transfer mixture to a 13 x 9 x 2 inch pan.
Bake about 10 minutes or until almonds are toasted, stirring twice. Cool almonds completely before serving. Store in an airtight container for up to five days.
Nutrition facts per serving (1 Tbsp): 62 cal., 5 g total fat (0 g. sat. fat), 0 mg chol., 33 mg sodium, 2 g cargo., 1 g. fiber, 2 g pro. Exchange: 1 Fat

Ricotta Cheesecake with Lemon Drizzle and Pine Nuts

This is actually a traditional Italian cheesecake...light and citrusy. Less dense than American cheesecake but just as delicious.
I made the cheesecake in the picture to the right. Wish I'd have taken a photo of a slice of the cheesecake but I didn't...next time I bake it I will.
PREP TIME: 10 minutes
COOK TIME: 1 hour 20 minutes
CHILL TIME: 4 hours or overnight
This is really better if it is made a day ahead and refrigerated.
3 tablespoons pine nuts
6 large eggs, separated
3/4 teaspoon cream of tartar
1/3 cup plus 1 teaspoon granular sugar substitute
2 teaspoons vanilla extract
1 (32 oz.) container part-skim ricotta cheese
1 teaspoon finely grated lemon zest
2 tablespoons fresh lemon juice
Position rack in middle of oven and heat to 275 degrees F. Lightly coat a 9-inch springform pan with cooking spray. Spread nuts on a baking sheet and toast until lightly golden, about 10 minutes. Cool. Increase oven temp to 325 degrees F.
In a large metal bowl beat egg whites until frothy, about 1 minute. Add cream of tartar and continue to beat until stiff peaks form, about 3 more minutes. Set aside.
In a separate large bowl, beat egg yolks, 1/3 cup of the sugar substitute, and vanilla for 1 minute. Add ricotta and zest, and beat on high until smooth.
Gently fold one-third of the whites into the yolk mixture, then add the rest of the whites and gently fold until well combined. Pour batter into pan, place on a baking sheet, and bake until cake is golden and mostly set, about 1 hour 10 minutes. Remove cake from oven and cool on a rack for 20 minutes.
Combine lemon juice and remaining 1 teaspoon sugar substitute in a sauce pan; bring to a simmer over low heat. Remove from heat and gently brush the surface of the cooled cake with two-thirds of the warm lemon mixture; drizzle the remaining mixture into the cracks. Sprinkle the top with pine nuts.
Cool cake completely, then run a knife around the edge before releasing from pan. Chill, loosely covered, for 4 hours or overnight. Serve chilled.
Makes 12 servings.

140 calories, 9 g fat, 4.5 g saturated fat, 11 g protein, 5 g carbohydrate, 0 g fiber, 140 mg sodium.

Usually egg rolls are deep fried and are definitely NOT diet fare. However, in this recipe you bake the egg rolls and they are just as yummy without all that additional fat.Each Serving (2 egg rolls) Provides: 2 proteins; 1 vegetable; 3/4 bread; 60 optional calories
Per Serving: 182 Calories, 15 g Protein, 7 g Fat, 15 g Carbohyddrate, 36 mg Calcium, 121 mg Sodijm, 59 mg Cholesterol, 1 g Dietary Fiber.
Here is the recipe!
1-1/4 pounds ground chicken
2 cups grated carrots
1-1/2 cups drained bean sprouts
4 ounces drained sliced water chestnuts
1/4 cup chopped green bell pepper
1/4 cup sliced scallions (green onions)
3 garlic cloves, crushed
1-1/2 teaspoons reduced-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon firmly packed brown sugar
1 tablespoon plus 1 teaspoon cornstarch
1/4 teaspoon ground red pepper
16 wonton skins (3-inch squares)
In a large nonstick skillet or wok, cook chicken over medium-high heat until crumbly, 5 minutes. Set aside.
To same skillet, add carrots, bean sprouts, water chestnuts, green pepper, scallions and garlic. Cook over medium heat, 3 minutes; return chicken to skillet.
In small bowl, combine 1 tablespoon water, the soy sauce, sesame oil, and brown sugar; whisk in cornstarch and papper. Pour into chicken mixture; toss well. Remove from heat and set aside.
Preheat oven to 450 degrees F. Place 1 wonton skin on work surface; spoon 1/4 cup chicken mixture on bottom third of wonton skin; fold both sides toward center and roll tightly. Place seam-side down on non-stick baking sheet; repeat with remaining skins and filling. (Rolls can be frozen at this point.) Bake until lightly browned, 15 minutes.
