- Hi all, sorry I have not been on Squidoo in so long but I'm back to try and keep my lenses up to date. Tis the season to start sharing all our holiday recipes so please feel free to do so on this lens. I always enjoy learning new recipes. As for what's for dinner tonight, we are just going to eat our left over shepherd's pie and Fish from the new restaurant, The Pub, in hampton. Check out the photos I added below. What are you all having for dinner?

- here in the Philippines we always have rice in our every meal. we'll be having a milk fish stew w/ lots of veggies for tonight's dinner of course serve with rice. yummy!

- Hi all, well today May 6, we had to go to Norfolk for one of Chip's dr. appts so we ate at Johnny Rockets at the mall for lunch. I had a tuna melt with fries & Chip had a Route 66 burger that had mushrooms & cheese on it with fries. Then on the way home for dinner we went to our favorite place over there Doumar's which has been there probably b4 I was born. They come out to your car & serve you on those trays that attach 2 your car. They have the best BBQ's! We got one and a lb. of BBQ to bring home. I made a short video while there, I'll edit it and put it on here probably tomorrow. It's kinda late now and we've been gone all day.

- Thank you for adding this great lens to the plexo on my recipe lensography, which I have added to your plexo below! As for what's for dinner at our house tonight, a simple taco salad. Start with a bed of shredded lettuce, pile on refried beans (I just heat up a can of vegetarian refried beans, but you could make your own), shredded cheese, salsa, sliced black olives, sour cream or guacamole, and jalapeƱos. If there's something else you'd like, add it as well. Serve with tortilla chips. Makes for a delicious but quick, easy, and relatively nutritious meal. We love it!

- Happy Cinco de Mayo Day Everyone! I hope you had a nice day! Well today Chip had a doctor's appt. so we went out to a Mexican Restaurant called Plaza Azteca that we enjoy. We had a burrito dish that had to burritos on it with a nacho cheese sauce. We got one steak and one chicken and cut those in half to split and with the beans, guacamole, tomatoe & lettuce on the plate & the chips & salsa it was a great meal! That is our usual when we go there. After lunch I had to go to Walmart and get groceries. For dinner I cooked the aready peeled & deveined bag of shrimp I got and sauted it in the left over butter scampi sauce I had from the other night. DELISH! We had that with broccoli & cheese. Tomorrow Chip has an appt with the diabetes center so we will be going to Norfolk and will probably hit our favorite place Doumar's:) The have the best BBQ's. I'll let you know what we get.

- The last few nights have been pretty busy and I have not been online much. On Sat. May2 we went to Cracker Barrel for chicken & rice night with Chip's family. Yesterday I just fixed the Cracker Barrel leftovers and some creamed corn and canned butter beans. Tonight I baked the frozen popcorn & coconut shrimp we had in freezer with left over corn and butter beans. Chip has a dr. appt tomorrow so we may end up eating out tomorrow? Not sure yet but I do need to go to the store so I may end up cooking?

- I fogot to post what we had last night:( It was pretty simple really? i just pan fried the chicken tenders I had in some butter and then poured some heinz mushroom gravy on them and added an extra can of straw mushrooms. It was really good and I fixed a can of butter beans and creamed corn with it. It was really pretty good. Tonight we are just planning to have leftovers unless we end up going out. We are still trying to decide. I have a left over salmon cake, the mushroom chicken, corn and butter beans so it will probably just be that tonight?

- Hi all, tonight I made Chip's mom's recipe of Salmon Cakes with my little twist added to it along with some french fries with ole bay seasoning. You can watch the video I made while making them on the Youtube plexo below.
Here is the recipe:
Chip's mom's Salmon Cake Recipe with My Twist!
2 cans of pink salmon
1 onion chopped
2 eggs
1 c. of oyster crackers made into crumbs
Take the cans of salmon, drain and run your fingers through the salmon picking out any little bones left in the meat. Some people do leave them in since they are not really that hard and so small but I prefer to pick them out. Add the onion, oyster cracker crumbs, and egg. Make into patties and fry them in butter til they are golden brown on each side. Enjoy!
P.S. I added the oyster crackers to the recipe to keep them from falling apart on me but Chip's mom's recipe does not call for them, she uses extra egg if they fall apart.

- Tonight's dinner was pretty simple. I just cooked some chicken tenders in a little butter and then poured kraft bbq sauce on them. It was good along with some broccoli with velveeta cheese in it. Yum! What did you all have?

- Tonight I fixed something a little different. Meatloaf hamburgers. It's 2lbs. of hamburger w/ onion, pepper, approx 3 tbsp. kraft bbq sauce, chili powder, 2 eggs, cracker crumbs (I used the garlic herb kind), couple dashes of italian seasoning, and some shredded cheddar cheese. I fried them up like hamburgers but they probably would be betton on a grill because the grease in the pan kinda broke up the meat but I also put a slice of that sundried tomatoe basil cheese on top of each pattie and mmmnnnn... was it good! Had some creamed corn with it too. DELISH! I left the other 4 patties to cook on the grill, so I froze those.

- Tonight I took a box of the SeaPak shrimp scampi and cooked them in a pan with a bag of the frozen sm. scallops I had and heated up some garlic red skinned mashed potatoes from Schwanns. Chip absolutely went bonkers over it! He couldn't stop saying Mmmmnnnn...! That stuff is totally delish! It taste just like Red Lobsters shrimp scampi. You could probably broil it too. There is a little left for his lunch tomorrow but not much:) I'm going to save the butter sauce for something else later.

- Tonight we had a great meal. I fixed some coconut shrimp that I got from Schwanns, some frozen popcorn shrimp, red skinned potatoes from Schwanns, left over corn from last night, and Chip's mom had fixed some pork chop stew and rice so we ended up having a huge buffet type meal. Chip's mom and nephew were here to help us eat it but there is still quite a bit left over. Tomorrow we are planning to eat the leftovers and cook some more bratwurst and hotdogs on the grill since it is supposed to be really nice outside. So, check back tomorrow night on my What's On Your Grill lens. I may make another video?

- Tonight I made a video while I was making dinner. Check it out on the youtube videos below. I made chicken tenders with sundried tomatoe basil cheese, broccoli with velveta cheese, and frozen corn mixed with creamed corn. I enjoyed making that video on it and will probably do more. - Yes, I am aware of your Giant Squid program and I look forward to the day when I too will be a Giant Squid but for now I'm taking it slow and learning my way around.
