Many of my favorite no-fuss recipes are from my mother-in-law. She has a recipe box that is full of recipe cards she got from her mother-in-law. I should actually name this lens as the recipes from my mother-in-law's mother-in-law.

My Mother-in-Law Yorkshire Pudding Recipe

I revisted my yorkshire pudding recipe which was given to me by my mother-in-law. After many years of experimenting with different recipes, this one is the simplest and the most foolproof.

There are many stories that go with different yorkshire puddings (also called popovers). Some claim that the secret for a successful fluffy popover is with the high cooking temperature at 425 degree F, others theorize that one should never peep or open the oven door during the cooking process, or the puffing will fail. Some recipes call for a high initial cooking temperature, then a switch to a lower temperature after the preheat process.

Well, the recipe I inherited is pure and simple. One constant temperature. One simple process. Healthy and natural ingredients.

3 eggs
1-1/4 cup milk
2 tablespoon butter or oil
1 cup flour
1/2 teaspoon of salt

1. Mix up batter at least 2 hours before cooking.
2. Beat eggs, then beat in all other ingredients. Batter should be thin like thick farm cream. Do not refrigerate batter. It should be at room temperature.
3. Grease a 12 compartment muffin tin and pour batter in.
4. Bake at 375 degree Fahrenheit oven for 40 minutes.

For variations, you can add some cheese and make cheesy popover, great for breakfast!

Baptist Church Ladies' Peanut Butter SquaresHere's another old-time favorite. My Mother in law calls this the Baptist Church Ladies Peanut Butter Square. It is a very easy recipe to make, and the peanut butter marshmallows combination gave the dessert a very nice texture, smooth to the tongue.

Step 1: Melt the following in a heavy pot:
1/2 cup butter or margarine
1 cup peanut butter
1-1/2 cup butterscotch chips

Step 2: Stir in
1-1/4 cup of Miniature marshmallows

Step 3: Pour into a greased 9 inch x 9 inch square pan. Store in refrigerator.

VOILA! It is done.

    Some of the best recipes are the simple old time favorites. I enjoy the recipes on this lens. Keep them coming. Necessity is the mother of invention. Because you are a busy working woman, I hope all recipes you feature will be simple, and no-fuss.

    The Yam salad is great for lunch, as it does not have to be warmed up. I followed your suggestion using feta cheese and olives. The peanut butter marshmallows squares are so smooth to the tongue. The texture is delightful.

Yam salad with craisinsIf you are pressed for time, this Yam Salad with Craisins is easily a favorite for three reasons: (1) It is healthy and tasty. (2) It is easy to make, there is very little cooking. (3) You can have many variations which keep the recipe fresh and exciting.

Ingredients list is simple:
- Yam or Sweet Potato
- Green onions
- Craisins
- Olive Oil
- Balsamic Vinegar

(1) Peel and cut up yams or sweet potatoes into chunk.
(2) Put in boiling water and continue cooking using medium heat until tender. (around 10 minutes)
(3) Cut up green onions.
(4) Mashed the cooked yams or sweet potatoes.
(5) Mix Olive oil, vinegar, green onions and mashed yams together to make one great salad.
Can be eaten warm, but best when allowed to chill in refrigerator to get the flavours blended.

Another variation would be to use feta cheese, onions and olives instead of craisins.
