An interview with Sandor Katz author of Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods

Sandor Katz has been fermenting foods and drinks for a decade. He has explored and experimented widely in the realm of fermentation. His mission is to propel more live-culture foods out into our culture. · Did you know that fermented foods are easier to digest than non-fermented?
· Find out how to multiply the nutrient value of your food by fermenting.
· Recognize fermented foods that are already in your diet.
· Make peace with the fact that we host ten times more microorganisms in our bodies than we have cells.
· Discover the cultural traditions of fermenting -- worldwide.

They've come out with a study recently claiming that fermented foods cause cancer. They took ONE chemical from these foods, concentrated it, then fed it to a mouse. Did not take into account any of the ANTI-cancer compounds in those foods. So if you hear about it, don't freak too much. It's just so-called "scientists" being myopic again.
