Workworking with Fishtail Oak: It's not real Oak, and it has nothing to do with fish!
The wood has a mottled, almost iridescent pattern with distinctive black marbling. Color tones vary from piece to piece, but generally you will see a golden tan to copper color with occasional silver, rose or burgandy overtones.
This combination of hardiness and beauty makes it an ideal accent wood for butcher block, end grain cutting boards. Fishtail Oak, while bearing the name Oak, is not of the same botanical family as the Oak known and beloved in America.
This is a renewable, sustainable harvest wood that grows in several areas including Asia and Australia. It does not grow in North America as far as I know, and because it's only an imported wood, it falls into our category of "exotic hardwoods".
"It's not a true Oak, and it has nothing to do with fishing."
