Welsh Rarebit With Guinness Recipe

Welsh Rarebit is a fancy form of cheese on toast (or grilled cheese without the top piece of toast). However, after searching the web I found a recipe for an Irish version of this delightful treat.
While it is similar to cheese on toast, it is far richer and has a more 'liquid' consistency. It is considered, in my opinion, a comfort food, and is a great and healthy snack for kids.
Here's the recipe:
Ingredients
- 2 tablespoons of butter (or margarine).
- 2 tablespoons of plain flour.
- 1 teaspoon of mustard (I use a mild French mustard
- but you can use your own favorite).
- 1 teaspoon honey (not necessary for the recipe
- but adds a subtle sweetness).
- 1/2 cup milk.
- 1/2 cup Guinness (if you don't have Guinness
- any stout will do).
- 1 cup Cheddar cheese
- grated (you can use your favorite cheese).
- Salt and pepper.
Instructions
Melt butter and slowly stir in flour, ensuring no lumps form.
Cook on a low heat until it turns slightly brown.
Remove pan from heat and slowly mix in the milk.
Return to heat and stir gently until the liquid thickens.
Add mustard, honey and Guiness.
Cook on a medium heat for 2-3 minutes.
Turn down the heat to lowest setting and add the cheese, gently stirring until melted.
Spread over toast and brown slightly under a grill
French Mustard (used in Welsh Rarebit)

I usually simply use Coleman's French Mustard as it has a wonderfully smooth flavor and texture, but occasionally I go for a little more exotic mustard. The one listed here not only is wonderful in the above recipe but is also excellent in a sandwich.
The addition of Thyme gives any recipe a nice flavor in addition to the mild flavors of the mustard. It is easy to cook with and very refined.
I find that this doesn't overpower the flavor of the cheese and Guinness - you can use a stornger mustard such as an English mustard, but I find you taste more of the mustard and less of the cheese.
Guinness Garlic Mushrooms Recipe
I've always loved mushrooms especially when cooked in Garlic. The combination of the flavor and texture is amazing and they are a great compliment to many meats. I have also used them as a starter and find that they are a great beginning to a meal.
The good thing about the recipe is that it's very simple and adaptable. As long as you have mushrooms and butter then you have a starter. You can add your own herbs and spices to the recipe, or even remove the garlic if required.
Here's the recipe:
Ingredients
1½ pounds of mushrooms (button are good, but you can use any)
One small onion. (chopped)
2 cloves of garlic (chopped)
1oz butter
¼ pint of Guinness.
Salt and pepper
¼ cup cream (optional)
¼ cup Beef stock
Mustard (optional)
Flour (to thicken)
Cooking instructions
Clean and chop mushrooms (some people cut off the stalks, but I use the whole mushroom).
Melt butter on low heat on stove.
Fry the onions and garlic for a minute until soft.
Add mushrooms, salt and pepper - cook on low for another minute.
Add Guinness and cook on medium high - cook for a couple of minutes until volume reduced to about half.
Add cream and stock and cook on low stirring constantly.
Mix flow with water until smooth and slowly stir into mushrooms.
Add Mustard to add a little kick (I use French normally).
Serving Suggestions
I use this as a starter, adding it to toast, or simply having this with some crusty bread. It can be used as a great topper to a steak.

Guinness Burgers Recipes
Guinness BurgersSummers coming! Dust off the grill, open a can of Guinness and whip up some nice Guinness Burgers. This recipe is very easy to use - in fact if you don't like the slight bitterness the Guinness gives, use milder ale or just simply leave out the Guinness.
Burgers are quick, tasty and require minimum preparation and clean-up! Enjoy - and drink sensibly!
Here's the recipe:
Ingredients
1 pound chopped or minced beef (doesn't have to be that lean)
1/4 cup Guinness Draught beer
2 teaspoons mustard (I find Coleman's French mustard adds a nice taste, and English mustard adds a kick)
1/4 teaspoon ground herbs (your choice - I use rosemary)
2 cloves garlic, minced (optional)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter or cooking oil (Only used if frying burgers)
1/4 cup finely minced onions (can be cooked separately or added into the patties)
Cooking instructions
In a bowl, mix the beef, beer, mustard, herbs, garlic, salt and pepper. (and onions if desired)
Form into 3 to 4 patties - I usually try and get 4 patties each just over 1/2 an inch thick.
If frying, melt the butter in a large skillet on medium and cook the burgers 4 to 5 minutes each side - this will give a 'medium' cooked burger; vary the time to get the burger how you like them.
If grilling, place on medium heated grill and cook for 4 to 5 minutes each side - this will give a 'medium' cooked burger; vary the time to get the burger how you like them.
Put to burgers to one side and fry the onions in the same pan (or a pan with some oil or butter melted if you grilled the burgers) for 2 to 3 minutes (if you haven't added them to the patties).
Serving Suggestions:
Garnish the burgers as you like - I add a tomato, the onions and a slice of cheese and then place between a slightly toasted hamburger roll.
You can have these with chips (fries), with a salad or with mashed potatoes and gravy.

This is a decent flavored mustard that has a decent bite to it. It adds a nice kick to any of the meals included in this site. Any Coleman's mustard is good, I particularly like the French Mustard, but Coleman's English mustard is better for beef dishes.
I find that the French mustard adds a nice flavor to the burger, while the English mustard gives the burger a nice unexpected kick.
Guinness Irish Stew Recipe
Guinness Irish StewIrish Stew: comfort food at its best. Adding ale or Guinness makes the meat more tender and gives the gravy a richer taste. You can use beer in many other stew recipes as well (beef, veal and even pork).
It's a classic British / Irish food that has been passed down for generations, and will continue to be a staple for years to come. It is easy to make, but delicious and very fulfilling.
Here's the recipe:
Ingredients
2 pounds lean beef.
3 Tablespoons oil
2 Tablespoons flour
Salt and pepper.
2 large chopped onions.
1 large clove garlic crushed.
2 Tablespoons tomato puree combined with 4 tablespoons water (you can replace this with any Tomato Sauce, even ketchup).
1-1/4 cups Guinness.
2 cups chopped carrots. If you like you can add mushrooms or other veggies.
2 cups of chopped potatoes (optional).
Thyme and Oregano.
Cooking instructions
Cut the beef in 1-1/2 to 2 inch cubes. Remove most of the fat.
In a bowl, mix the flour, salt and pepper.
Mix the beef with 1 tablespoon of oil, until all the pieces are well covered.
Cover the beef with the flour mixture.
Heat the remaining oil on medium-high heat and brown the meat.
Add onions, garlic and tomato and simmer five minutes.
Remove the meat from the frying pan and place in a casserole dish.
Add a little bit of Guinness beer to the pan and boil.
Pour the contents of the pan, the remaining Guinness, the carrots (and other veggies if you wish) and the potatoes over the meat.
Simmer on the stove, at low heat, for 2 to 3 hours.
Serving Suggestions:
There are many ways you can eat this wonderful stew:
In a bowl with a dollup of Sour Cream.
Mixed with some Egg Noodles.
With Mashed Potatoes.

I sometimes use dried herbs and spices in my recipes, but when possible I prefer to use fresh. However, in this economy that becomes very expensive. I therefore am trying to grow my own - so far my successess include Rosemary (which also gives off a wonderful fragrance as it grows), some cress and some Parsley. This kit is good, and I feel I'll eventually master the growing process!
Fresh herbs just add a little 'something' to a recipe - there's a lot more flavor and when you've grown your own, there's also a sense of achievement.
Guinness Pot Roast Recipe
Guinness Pot RoastPot roast is a simple yet effective way of using a lessor quality joint of beef. It also is a quick and simple meal.
It's not much different than normal pot roast, but the gravy has a more bitter and full flavor, and the meat seemed a little more tender. This really is a great way to cook a family meal quickly and easily.
Note: If you don't have a crock-pot, you can do this on the stove on a very low heat or in a very low oven.
Here's the recipe:
Ingredients
4-5 pound beef rump roast. (Any roast will do, doesn't have to be top quality).
1 Tablespoons oil
2 Tablespoons flour (to thicken).
Salt and pepper.
2 large chopped onions.
1 large clove garlic crushed. (optional)
1-1/4 cups Guinness.
2 cups chopped carrots.
6 cups of chopped potatoes
Your favorite herbs (I tend to bay leaves and a little oregano).
Cooking instructions
Brown all sides of the beef roast in a pan.
(Optional)Coat the beef with the flour - this will thicken the gravy as it cooks.
Add beef and Guinness and herbs together in a crockpot and cook on low for about an hour (Note - the amount of Guinness depends on the size of the meat. I tend to bring the level to about an inch up beef - the juices will add to the liquid as it cooks. You can add some stock as well to make it less bitter).
Add the onions, garlic, potatoes and carrots.
Continue to heat in crock-pot for several hours - I find the longer it cooks, the better.

A crock-pot (or slow cooker) is an essential tool for the kitchen. I like them because you can prepare a meal quickly and let it cook all day.
This one is large (6-quart), it has oval stoneware pot that can be removed - this allows you to use it on the stove, in the oven or in the crock-pot. It also allows you to take the food straight to the table.
It has a digitial timer, and several modes that allow for different heat settings - the most useful being 'keep warm'.
It is large so may cause storage problems for some.
This really is a useful tool for pot-roast - it can also be used for the stew recipe too - it adds a touch of elegance by allowing you to transfer the dish directly to the table - carving the meat in the dish is an interesting way to engage your guests while serving.
Guinness BBQ Chicken Recipe
Guinness BBQ ChickenFor this Guinness recipe, you have to marinade the chicken so I'd prepare the chicken the night before you plan to BBQ. Generally I find that the longer you marinade, the more of the flavor is infused into the chicken.
Here's the recipe:
Ingredients
1 teaspoon salt
3lbs of chicken breast (you can use wings and legs here but I find chicken breasts more succulent and tender).
1 bottle of Guinness
1 tablespoon dark brown sugar
1 tablespoon lemon juice
1 tablespoon vegetable oil
1/4 tablespoon honey (optional - it gives an additional sweet kick)
¾ tablespoon of syrup - the thicker the better.
1/8 teaspoon curry powder / chili powder
Herbs and spices of your choice (I used a little sage).
Cooking instructions
Rub salt all over the chicken and place it in a shallow dish (try making only 1 layer of chicken).
Mix all the ingredients together and pour over the chicken. Cover all the chicken pieces.
Cover your dish and refrigerate overnight . Try turning your chicken pieces at least once.
Remove the chicken from the marinade and cook on a low BBQ grill turning occasionally.
Keep your chicken moist by brushing on some of the marinade
Continue turning and brushing for approximately 20 minutes until the chicken is tender.
Serving Suggestions:
You can eat this chicken hot or cold; in a bun or with a salad.; with potatoes, rice etc.
You can also marinade chicken cubes and make a kebab with the cubes, some onion and some peppers.
Guinness Shepherd's Pie Recipe
Guinness Shepherd's PieTraditional Shepherd's pie uses lamb; this gives it a distinct flavor that melds well with the gravy, mashed potato and vegtables. You can vary the recipe by using ground beef if you wish. This is another 'all in one' meal.
This is really another feel good recipe, that is hearty and filling but full of flavor and taste.
Here's the recipe:
Ingredients
1 - 2 pounds ground lamb (use beef for cottage pie)
1/2 pound of carrots
1/2 pound of frozen peas.
Herbs of your choice (I use parsley and sage usually).
2 cups of beef stock
1 medium onion
Olive oil
1 or 2 bottles Guinness (if you use one, then increase stock)
2 tablespoons tomato paste
2 cups cheddar cheese (optional)
3 pounds potatoes
1/4- 1/2 cup milk
1 stick butter
Salt and pepper
Cooking instructions
Heat oven to 375 degrees F.
Use potatoes, milk and butter to make mashed potatoes (It's actually better if you make them a little lumpy, and even slightly undercook the potatoes).
Brown the chopped lamb and drain the excess fat.
Add 1 bottle of Guinness to chopped lamb and simmer until liquid is reduced.
Add tomato paste.
Place in casserole dish.
Fry the onions until slightly translucent (you should also add the carrots - you might want to pre-cook the carrots to ensure they are soft after baking)
Mix the herbs, carrots, peas and onions together with the lamb.
Add the remaining Guinness and stock so it just covers meat and vegetables.
Add the mashed potatoes on top - use a fork to build 'ridges' in the top and to ensure the meat is sealed below the potato.
If required sprinkle cheese on top.
Bake for 20-25 minutes.
Some may find this a little bitter, so vary the amount of Guinness and stock used. You can vary the quantities to control how much gravy you want, and can also add some flour to thicken.
You can also add a little kick by adding some English mustard to the meat.

Guinness Ice-Cream Recipe
Guinness Ice-CreamMany years ago I tried Guinness ice-cream from a store and loved it - it was a St Patrick's day special edition. It took me a while, but I eventually found the recipe online. This is one of the hardest recipes to master. It's easy to do, but to get the right consistency and flavor is incredibly difficult. I attempted this recipe four or five times before getting it right.
The only thing I can say is that it was worth the wait - trial and error really paid off.
Here's the recipe:
Ingredients
12 ounces Guinness.
2 cups heavy cream.
2 cups whole milk (2% can be used but the ice-cream won't be as good!).
3/4 cup sugar.
1/2 teaspoon of vanilla essence (this is tricky, it really depends on your taste).
6 egg yolks.
Cooking instructions
Place Guinness in a pan and simmer for about five to ten minutes (until it's about 3/4 its original volume).
Slowly combine the cream, milk and sugar in another pan and add the vanilla essence.
Bring to a slight boil (be careful not to boil too much) and remove from heat.
Beat the eggs and slowly begin to whisk in the cream mixture.
Slowly heat the mixture for about five minutes until it thickens (again this is tricky).
Remove from heat and strain into a clean container. (A good tip here is to cover in cling film, ensuring that the film touches the surface - this ensure a skin doesn't form - if it does, just remove the skin before the final stage).
Chill for 2 hours (the mixture, not you!!!)
Whisk in the Guinness reduction and blend well.
You can either simply freeze it at this stage, or use an ice-cream machine. (I don't have the machine, but find that the ice-cream is pretty good anyway).

You can use an electric mixer with this recipe, but I find that a hand whisk gives a far better result - the icecream has more texture when mixed by hand, and while the flavor doesn't change, the texture does add to the enjoyment.
Guinness Brownies Recipe
Guinness BrowniesWho doesn't like a brownie? There are hundreds of different ways to make a brownie, and I usually cheat and buy a packet mix. However, as I'm on this roll with real cooking, I decided to try out a recipe I saw for Guinness Brownies. I adapted the recipe and the result was pretty good.
This brownie does have a distinct flavor so you may want to mess around with the amount of Guinness to get the perfect combination that you like.
Here's the recipe:
Ingredients
1 cup flour
3/4 cup Hershey's cocoa powder - or any unsweetened cocoa powder.
1/4 teaspoon salt
6 tablespoons butter (its best to leave this out of the fridge for a while to make it easy to use)
8 ounces dark bittersweet chocolate,
3/4 cup chocolate chips (any variety - you could add nuts as well here)
4 large eggs
1 cup sugar (if you have confectionary sugar, this works better)
1-1/4 cups Guinness
1 cup semi-sweet chocolate chips
Cooking instructions
Heat the oven to 375 degrees F.
Find a 9 x 13 non stick baking pan (or line it with foil, or spread some butter over surface to stop brownies from sticking).
Mix flour, cocoa powder and salt together in a bowl.
Melt butter, bittersweet chocolate and chocolate chips together - I use a bowl over a pan of bowling water - you probably need to keep stirring.
Beat eggs until fluffy and add melted chocolate - continue to beat until well mixed (I used the mixer on a medium to high setting).
Mix in the flour mixture, and the Guinness - drop the semi-sweet chocolate chips evenly on top. (Don't worry if the batter seems thin).
Bake for about 25 to 30 minutes in the center of the oven - I test to see if they are cooked by putting a knife, or fork into the center - if it comes out clean then the brownies are done.

The Pink Panther Recipe with Guinness
There are many that will call this sacrilegious, but there are many different ways to drink Guinness - the obvious way is to simply enjoy a good old pint of the black nectar. The problem for a lot of people is that Guinness is simply too bitter and too heavy. There are quite a few ways to make it lighter and still be enjoyable. There is also one that is favored by the ladies. This is the Pink Panther. Not only does it have a far sweeter taste than traditional Guinness, but it also has a wonderful pink color!
Here's the recipe - it's simple:
Ingredients
1/2 pint of Guinness.
1/2 pint of hard cider.
A dash of blackcurrant
Instructions
Pour the half pint of Guinness in the traditional manner.
Slowly pour in the hard cider, swirling the glass gently to mix - careful here not to be too vigorous as you'll end up with a lot of foam.
Add a dash of blackcurrant juice - add as much or as little as you wish.
You can stir if you want, to get a nice pink color through the drink.
Guinness Milkshake
Guinness MilkshakeThe flavor is actually surprisingly good - however it must be noted that this is an alcoholic beverage as the Guinness is not heated.
Here's the recipe - it's simple:
Ingredients
1/2 pint of Guinness.
1/4 pint of vanilla icecream.
1/4 pint of chocolate icecream.
A dash of peppermint flavoring.
Whipping Cream.
Chocolate to Granish.
Sprig of Mint.
Instructions
Mix the icecream, Guinness and peppermint flovoring in a blender and pour into a cold glass.
Garnish with whipped cream, chocolate and sprig of Mint.
You can vary the amount of icecream to Guinness to suit your taste. A nice twist is to add some crushed nuts, or even maltizers (malt balls).

Wolfgang Puck Stainless Steel Cookware Set - 18pc

This is really an amazing set of pots. I've had these for about a year and I am amazed how good they look and generally how well I am able to cook with them. Even with teenagers who constantly burn food, the pans clean up with a little soaking and some elbow work. They still look new after a year.
I find that they transfer the heat well and are pretty contrallable. The glass tops make it easy to check the food. I find the frying pans hardest to use, but with the right amount of oil they work well.
My only problem with the set is that the handles get very hot - they are stainless steel pots and there seems to be no attempt to stop the heat going to the handle. They are well worth the money.

- Your intro photo, alone, was enough to make my mouth water. Guinness is my standard order whenever I head out to a bar. While some traditionalists might consider the exotic recipes above blasphemy, I would not be averse to sampling some of them...especially the meaty ones...with a big glass of Guinness on the side! :D (The other recipes have certainly got me curious, too. Thanks for this interesting lens!)

- Love it. And I loved the joke about Arthur Guiness. Have been to Dublin and toured the works; never tasted a better brew anywhere. It must be how they keep and serve it. Will be lensrolling this to my homemade stew with dumplings recipe

- I love the bitter taste of Guinness. Recently someone asked me to make a Guinness cake. Basically it's a chocolate cake made with the stout. Very delicious!

- My husband and I love Guinness! I make a stew similar to the Irish stew, and I want to add Guinness to it next time I make it. A few of the other recipes look good too. I never knew that it wasn't considered a vegetarian food -- hadn't heard of isinglass being added to it. That's good to know, since my daughter-in-law is a vegetarian (but then again, she wouldn't be eating my stew anyway!).

- Some excellent recipes here, trouble is Guiness is soo expensive here in Oz, but favouriting your lens just incase can get some. Lensrolling to my recipe lenses aswell - thumbs up :)

- Enjoyed the lens. Reminds me that I haven't drunk a Guinness for ages! My wife used to make a rich fruit Guinness cake. Must ask her if she's still got the recipe because it was delicious.

- Great lens, 5***** You did a great job on this, I love Guinness too! You are only the 2nd person I have come across who seems to know the difference between Shepherds and Cottage Pie (ie: Lamb or Beef). I never did know growing up. Love the beer joke too - agree totally, Budweiser isn't beer... I will have to try adding Guinness to the pot roasts, should give it a nice strong flavor.

- I make a wonderful Corned Beef with Guinness. My hubby also makes bread with it. A couple days ago, he made homemade tamales with the meat cooked in Guinness. As you can tell, we're big fans! Great lens
