Healthy Meal Plans Are For Wimps!

I used to think that!  Now that I have two school-aged children who seem to have hours of homework each afternoon, I think just a little bit differently. Nope, Healthy Meal Plans aren't for wimps.

Here's my story: 

I really thought I could wait until three or four o'clock to decide what to have for dinner.  I got a rude awakening when at five p.m., the frozen chicken was still sitting in the fridge in one solid block.

That's when I'd resort to the processed, convenience foods.  It would be another chicken nugget, tator tot, can of corn kind of night.

"We can't live like this," I thought.  So I went on a mission looking for a better plan. 

 

My Tips For Healthy Meal Plans 

1. Have a few quick, easy and on-the-go Healthy Meal Plans alternatives for those nights when soccer practice is scheduled right after piano lessons. Some ideas are:
- boneless chicken tenderloins that can be breaded and sauteed in just a few minutes
- fruit and yogurt parfaits with wheat toast or a whole wheat bagel
- chef's salad with turkey, cheese and lots of veggies

2. Take advantage of the weekly grocery sales and purchase stock-up quantities of chicken tenderloins, ground turkey, lean ground beef, etc. so you have lean meats on hand at all times.

3. Separate those lean meats into meal-sized portions. Don't throw the whole styrofoam container into the freezer as soon as you get back from the store.

Make some small hamburger or ground turkey patties, then freeze them with a sheet of wax paper in between each patty.

Separate the chicken tenders into meal-sized portions and freeze those individually.

Freezing your meats this way will make it easier and faster to plan healthy meals as well as reducing the defrost time significantly.

4. Serve breakfast for dinner. Make Healthy Meal Plans fun by rearranging the order of traditional meals. Eggs, lean ham and whole wheat pancakes are a healthy and fast alternative to chicken nuggets and macaroni and cheese.

5. During the summer months, purchase extra containers of strawberries, raspberries, blueberries and blackberries. Flash freeze them by lightly rinsing, drying, then place them in a single layer on a wax paper lined cookie sheet. Freeze the individual berries, then store them in a freezer bag for the winter months. Your family can enjoy healthy, fresh berries and smoothies all year long.
