Vegetarian Meat Substitutes

Soybean-Based and Wheat Gluten Meat Substitutes

For vegetarians who would like to find meat substitutes that fill your need to get your protein, this page is for you. My family has eaten these foods for years as a healthy diet to avoid more killing of animals. We never ate pork anyways, and I couldn't look at those big brown eyes of the cows out in the field on farms and then eat a hamburger. The frozen non-meat grillers from Morningstar Foods at your local Wal-Mart tastes just as good, and is so much healthier for you. Just put in a hamburger bun and add your favorite fixings, such as: lettuce, tomatoes, cheese slice, onions, mustard, relish, mayonnaise and ketchup, and alfalfa sprouts. The Seventh-Day-Adventist church, (my mother was a Seventh-Day-Adventist and my father was a Mormon, or L.D.S.),have bookstores where they sell cookbooks that tell you how to use these meatless products. They also sell many of these foods at their bookstores, along with other healthy foods such as banana chips, drinks, gravy mix, healthy candy snacks, granola and more along with music. Check out where they are in your area in your phone book or on the internet. In my area they are listed as ABC (for Adventist Book Center).

Why Choose Meat Substitutes?

There Are Many Reasons For Going Vegetarian

Vegetarians do not eat meat, fish, and poultry. Vegans are vegetarians who abstain from eating or using all animal products, including milk, cheese, other dairy items, eggs, wool, silk, and leather. Among the many reasons for being a vegetarian are health, ecological, and religious concerns, dislike of meat, compassion for animals, belief in non-violence, and economics.
Religious reasons include (Hindu, Moslem, Buddist, Seventh Day Adventist). Younger vegetarians are usually part of a family that eats vegetarian meals for health or other reasons. Older children may decide to become vegetarians because of concern for animals, the environment, or their own health.
Just as people are vegetarians for different reasons, the diets of vegetarians are not all the same. With careful planning, a vegetarian diet can be healthy, no matter which type of vegetarian diet you choose.
The vegetarian diet has become much more popular in recent years. It is now estimated that over one million Americans are reported to limit his/her consumption of meat for health reasons.

Types of Vegetarian Diets

Types of Vegetarian Diets

Before your child or family switches to a vegetarian diet, it's important to note that all vegetarian diets are not alike. Some of the major vegetarian categories include:

* ovo-vegetarian - eats eggs; no meat
* lacto-ovo vegetarian - eats dairy and egg products; no meat
* lacto-vegetarian - eats dairy products; no eggs or meat
* vegan - eats only food from plant sources

Many people who call themselves vegetarians are actually semi-vegetarians.

Abstaining From Meat For Religious Reasons

The Seventh-day Adventists present a health message that recommends vegetarianism and expects abstinence from pork, shellfish and other foods proscribed as "unclean" in Leviticus.

The Word of Wisdom is a dietary law given to adherents of the Latter Day Saint movement (also known as Mormonism) which says that meat and fowl "are to be used sparingly; And ... that they should not be used, only in times of winter, or of cold, or famine." Not given as advice, this commandment is reiterated in the same section, "And these hath God made for the use of man only in times of famine and excess of hunger."

All Oriental Orthodox, Eastern Orthodox, and Eastern Catholic monastics abstain from meat year-round, and many abstain from dairy and seafood as well. Laity generally abstain from animal products on Wednesdays (due to a traditional belief that it was a Wednesday on which Judas arranged to betray Jesus Christ) and Fridays (because Jesus was crucified on a Friday), as well as during the four major fasting periods of the year: Great Lent, the Apostles' Fast, the Dormition Fast and the Nativity Fast. This is not for environmental or animal welfare reasons, but for spiritual reasons. Fasting is seen as purification and the regaining of innocence. Through obedience to the Orthodox Church and its ascetic practices, the Orthodox Christian seeks to rid himself or herself of the passions, or the disposition to sin.

Roman Catholic monastic orders such as the Carthusians and Cistercians also follow a strict vegetarian diet, and Catholic laity are encouraged to abstain from meat on Fridays and through the Lenten season leading up to Easter.

Some Charismatics believe raw veganism was the original diet of humankind in the form of Adam and Eve, and if they are ever to return to an Eden-like paradise then they will have to return to a similar diet. A "diet of Paradise" doctrine also appears in Orthodox Christianity.

Some members of the Religious Society of Friends (Quakers) practice vegetarianism or veganism as a reflection of the Peace Testimony, extending non-violence towards animals. Historically, the early vegetarian movement had many Quaker promoters.

Health Benefits of Being a Vegetarian

WHAT ARE THE POSSIBLE BENEFITS OF A VEGETARIAN DIET?

Since vegetarianism includes such a wide variety of dietary habits, it is difficult to generalize about the benefits and risks of the vegetarian diet. But here's what studies have shown about vegetarianism and health:

Vegetarians in the U.S. have a lower incidence of heart disease than the general U.S. population. This may be because most vegetarian diets are low in total fat, saturated fat and cholesterol. Vegetarian or nonvegetarian diets that are low in fat, saturated fat and cholesterol may decrease blood cholesterol levels. (A high blood cholesterol level is a major risk factor for heart disease.) However, some lacto-ovo vegetarians eat a diet that is very high in fat and saturated fat. If these people were separated out, they might have a rate of heart disease similar to the general population.

Vegetarians generally have a lower incidence of high blood pressure and a lower rate of Type 2 diabetes than do nonvegetarians. These benefits may also be due to decreased fat and/or increased fiber in the diet. They could also be due to decreased incidence of smoking, increased physical activity, and/or less obesity, often associated with vegans.

Vegetarians of the Seventh Day Adventist faith have lower rates of death from colon cancer than the general U.S. population. This may be due in part to increased fiber intake, decreased fat, and/or increased amounts of fruits and vegetables in the diet (which may be protective against cancer).

Vegetarians, especially vegans, have less incidence of obesity. This may be due to eating less total calories, less fat, more fiber and/or to increased physical activity, and/or less obesity, often associated with vegans.

There's some evidence that vegetarians have lower rates of osteoporosis, kidney stones, gallstones, and diverticular disease. However, studies relating a vegetarian diet with these benefits are still inconclusive.

These health benefits found in vegetarians may not be solely due to diet. Lifestyle habits other than diet, such as exercise, religious practices, smoking, and alcohol can also influence health. The research does not always separate out whether it is the diet alone which makes the difference or whether these other lifestyle factors also play a part. Therefore we cannot conclude that a vegetarian diet is the healthiest diet, even though it can be a very healthy diet. In fact, we know that similar health benefits can come from a non-vegetarian diet which follows the Dietary Guidelines. But because many people who choose to eat a vegetarian diet also practice other healthy lifestyle habits, vegetarians as a whole have better health statistics than the rest of the U.S. population which includes many people who eat poor non-vegetarian diets.

How Many Animals Are Killed To Provide Dinner Table Meat?

The animal death toll is extremely high. Each year in the United States, over one hundred million cows, pigs and sheep are killed in slaughterhouses. An additional four billion birds, primarily chickens, are also slaughtered annually. Altogether, these figures represent a line of animals stretching over 750,000 miles long - far greater than the distance to the moon and back.

Meat Substitute Brands

About the Brand
For more than 65 years, Worthington and Loma Linda have created new and innovative products for consumers looking for vegetarian options.

Worthington Foods began as Special Foods in 1939, founded by psychiatrist Dr. George Harding. Dr. Harding was committed to providing health for the body and mind with an emphasis on nutrition and vegetarianism. The first products were the meat alternatives Proast (dark meat) and Numete (light meat). Special Foods grew throughout the years and saw a jump in production due to a shortage of meat during WWII. In 1945, Special Foods changed its name to Worthington.

In the decades to follow, Worthington Foods led the way to new vegetarian products. During the 1950s, Worthington increased in size due to acquisitions and new product developments, such as Soyamel and Veja-Link, the world's first vegetarian hot dog. In the 1960s, Worthington experienced two major breakthroughs. First, using spun soy fiber to create a meat-like texture helped to bring new vegetarian products to market. Second, Worthington was the first to bring frozen vegetarian food into supermarkets.

In the 1970s, under new ownership by Miles Laboratories, Worthington introduced Morningstar Farms products. In 1982, the original founders bought back the business and, soon after, Dale Twomley became CEO, taking the company public in 1992. You now find these products under the Kellogg's family of brands.

About Kellogg's
Consumers around the world are enjoying Kellogg products--one of which, Kellogg's Corn Flakes, has been part of a healthy, delicious morning for a century. The company that makes breakfast and snacks for millions began with only 44 employees in Battle Creek, Michigan, in 1906. Today, Kellogg Company employs more than 25,000 people, manufactures in 17 countries, and sells its products in more than 180 countries.

Over the past 100 years, innovation and a commitment to being the best in the categories in which they compete have guided the company. From being the first company to offer premiums in its cereal boxes to being the first to fortify its cereals, Kellogg has historically been a leader in industry, innovation, and marketing.

The company's founder, W.K. Kellogg, had a strong commitment to nutrition, health, and quality. His vision continues to drive improvement in Kellogg's products and processes, with the goal of providing great-tasting, nutritious products that meet the most rigorous quality standards.

The company's brands include Kellogg's, Keebler, Pop-Tarts, Eggo, Cheez-It, Nutri-Grain, Rice Krispies, Murray, Austin, Morningstar Farms, Famous Amos, Carrs, and Kashi, among others.

-----Important Advice------

A vegetarian diet can be a very healthy diet. However, the less variety in the diet, the more careful people need to be to get all the nutrients they need. Vegans should be especially careful to get vitamins B12 and D, and the mineral iron. Vegan children should have their growth monitored to make sure they're getting enough calories to meet their needs.

From Publishers Weekly
Perfect for students, but just as valuable for health-, time- and budget-conscious grown-ups, Raymond's updated cookbook offers 142 quick and easy recipes for all kinds of vegetarian delights, including breakfasts, salads, sandwiches, pastas and stirfries. With the knowledge of a nutritionist and the warmth of a mom, Raymond urges her readers to embrace meatless cooking for its ease, its economy and its benefits for both people and the environment. For those new to vegetarianism, she covers techniques for smart shopping and kitchen tricks; for the truly harried, her 10 "No-Time-to-Cook" recipes prove that a decent and healthy meal can be whipped up sooner than you can say "Pizza to go." The recipes draw on various cuisines-there's Greek-Style Scrambled Tofu, Black Bean and Yam Quesadillas, Pad Thai and Pasta Primavera-and are uniformly simple and delicious. Raymond also offers vegan recipes, drinks and desserts. With readily available ingredients, prep times that never exceed 20 minutes (and that are often in the single digits) and directions that rarely call for any appliance more complicated than a blender, this volume should be required reading for any student vegetarian.

The authors suggest substitutes for animal products and recommend ways to ensure that one consumes sufficient proteins and vitamins while following a vegan regime. Recipes present few surprises, relying on tofu and other soy products as textural components and substitutes for meats and dairy products. Keeping in mind that many cosmetics are

I am a raw food vegan although my son eats cooked food he too is a vegan. I was looking here to see if I could add something different to his meals. My problem is that I am very wary of can foods period because of the sodium content used to preserve the food. Do you find that this problematic at all?
  • Becky_Smith Mar 9, 2010 @ 11:29 pm | delete
My kids favourite meat substitute are macadamias and cashews and they also love soaked chickpeas fried with onion, garlic, oregano and salt and pepper.

Great lens. Meat substites in cans, who'd have thought it :) Our dutch grocery stores mostly carry meat substitutes that actually look like meat. Fit right for baking as well :)

You've done a great job with this topic, very helpful for those considering or new to being a vegetarian.
  • Tiddledeewinks Sep 3, 2008 @ 11:27 pm | delete
BTW, a lot of these "meat" substitutes DON'T look like meat at all, and can be chopped up to put in casseroles, etc. It's not a cop-out if you eat vegetables, no matter what shape it is molded into. It's STILL veggies.
  • Jenafern Sep 3, 2008 @ 7:33 pm | delete
great info for vegetarians & those thinking about it :-) I've been veg for 17 years and veg meat substitutes can really be better than the real thing.. especially since you know there was no suffering involved in making your 'food.' If anyone is considering going veg,

surfsusan~ we substitute because we DON'T want to eat the animals. I agree additives are Not healthy for you, which is why we should eat MOSTLY FRESH veggies and fruits and nuts. But, occasionally, you can eat the canned stuff, like on a cook-out. It packs nicely!
  • surfsusan Jul 30, 2008 @ 12:48 pm | delete
I don't get this, if you do not want to eat dead animals why substitutes? Also canned food, the producers have to add preservatives for the food to stay "fresh", not what I consider as healthy food.

You have done a great job here of collections all the (American) meat substitues though.
  • Ben-Miles Jul 16, 2008 @ 9:21 am | delete
Great job on providing such a lot of information about vegetarian living.

I just really hope you're not trying to advocate the consumption of Soy. Soy is really not good for you, especially when it is un-fermented.

And, isn't being part of a vegetarian to remove yourself from meat entirely. Surely eating meat substitutes is a cop-out and continuing to still let meat have a hold on your dietary or habit choices, even if it's not actually meat you're eating.

I would suggest you read "The Whole Soy Story" by Kaayla T Daniel (if you haven't already) and "The China Study" by T Colin Campbell.

Otherwise, a good job. Keep up the vegetarianism - it's good for you and good for the environment. :)
  • enslavedbyfaeries Jul 4, 2008 @ 1:03 am | delete
This is fantastic! I'm a little embarrassed to admit that I have never heard of some of these meatless products and I have been vegetarian for over 17 years. Thank you for this great resource of information. Nicely done. 5*'s!!

I love Loma Linda Tender Bits, I use them in a stir fry made with rice, turmeric, nappa cabbage and whatever veggies I have on hand at the time. It is my favorite thing to eat.

I've been vegetarian for 24 years now, but I do drink milk, and eat yogurt and ice cream and cheese.
