Some ideas for using this pan are adding strawberries to the center as shown to the right. Or try blueberries. Or how about a handful of Valentine's M&M's (red, pink and white)? You could even melt some white or milk chocolate and fill in the inner heart.

One really neat thing about this pan is that because of the way it is shaped, each section of the cake is a perfect serving size.

Removing cakes from decorative pans

Coat pans with shortening and flour

These decorative pans have lots of "nook and crannies", so preparing the pan before cooking is important. Having a cake stuck in a beautiful pan is no fun at all. The best method to ensure a good cake release is to use shortening and flour.

First coat the whole pan with shortening (I wear a latex glove for this procedure - it makes for easy washing-up afterwards). I make sure to coat all of the corners and edges of the pan's inside "architecture". Then I use either flour (for light colored cakes), cocoa (for chocolate cakes), or dry cake mix (if using a boxed mix) and completely cover the coating of shortening. Add the flour (or cocoa etc) to the coated pan and shake the pan around to coat the entire surface of the pan. You can then lightly tap the edge of the pan on the sink (or other surface) to remove any excess.

When the cake is done, remove it from the oven and let it cool for about 10 minutes. Then turn it upside down onto a cooling rack and gently tap the pan (I use a wooden knife handle) to release the cake. If you feel resistance, tap the pan a few more times. The cake should release with no problems.

What is a Heating Core?

I was not familiar with a heating core until seeing the recommendation for using one in the description of the larger basic heart pans. Here's the blurb from Wilton itself: "Distributes heat to bake large cakes evenly. Releases easily from cake. Recommended for 10 in. diameter or larger pans for complete baking."

Here's what one Amazon reviewer says,"This core is remarkable. It is so easy to use, just fill it with cake batter and insert it in the cake pan. Pour the remaining batter in the pan and large cakes come out wonderful. This heating core allowed by daughters half sheet cake to come out perfect."

Place the heating core in the center of your pan and pour some of your batter into it. Then pour the rest of your batter into the pan as normal. The heating core helps distribute heat to the center of your cake. When the cake has finished cooking and has cooled a bit, remove the core and use the cooked cake inside of it as a "plug" to fill the resulting hole. Easily covers with frosting.
Heating cores recommended for cakes 10" and larger.

Lots of pretty heart shaped pans shown here. I used to have a copper heart jello mold, but don't know what happened to it. Lost in a move somewhere, I suppose.
