Hot Cocoa Recipes to Love

Everyone probably has his or her favorite hot cocoa recipe, but I bet they don't agree on which recipe is best! Here's a look at some of the yummiest hot cocoa recipes. Don't just stick with your favorite cocoa recipe. Try something new! Maybe you will find a new favorite. [hot cocoa photo: André Karwath]

Basic Hot Cocoa Recipe

Hot Cocoa Ingredients

4 cups milk
1/2 cup sugar
1/4 cup unsweetened cocoa powder

Preparation

Mix the ingredients in a saucepan. Heat over medium heat until the cocoa is hot, but not boiling! If you reach boiling, you'll change the flavor of the milk. Serves 4.

Hot Cocoa Tip #1

If you make your hot cocoa from milk, don't overcook it! Overheating milk in the microwave gives it a skin. Scalding it on the stove changes its flavor, generally not in a good way. Heat your cocoa until it is hot, not boiling.

The Perfect Hot Cocoa Mug

I love the way a mug of hot cocoa keeps your hands nice and toasty!

Mexican Hot Cocoa

This is aromatic hot cocoa that gets a bit of a kick from the cloves and chili peppers. I like it because it is not too-sweet, but feel free to add more sugar.

1/2 cup unsweetened cocoa powder
1 tablespoon flour
1/4 cup brown sugar
4 cups milk
3 whole cloves, crushed
1/4 teaspoon chili pepper, ground or crushed
1 cinnamon stick, broken into pieces
2 tablespoons powdered sugar
1-1/2 teaspoons vanilla extract
whipped cream and cinammon sticks for garnish

Mix the cocoa and flour together in a saucepan. Whish in the brown sugar, milk, cloves, chili pepper, and broken cinnamon stick. Stir over medium heat until hot, not boiling. Use a strainer or slotted spoon to remove the floating spices. Stir in the powdered sugar and vanilla. Using a wire whisk or hand blender, beat the mixture until it is foamy. Pour into 4 mugs. Add a cinnamon stick to each mug and top the cocoa with whipped cream. Serves 4.

White Peppermint Hot Chocolate

8 oz white chocolate, chopped
4 cups milk
1/2 tsp peppermint extract

Heat and stir the milk and white chocolate until the mixture is hot. Remove from heat and stir in the peppermint extract. Whisk the hot cocoa until it is foamy. Top with whipped cream and a sprinking of crushed peppermint candies.

Vegan Hot Cocoa Recipe

This hot cocoa recipe uses soy milk rather than dairy milk.

2 1/2 cups soy milk
3 tablespoons sugar
3 tablespoons cocoa powder
1/2 teaspoon salt (optional)
1/2 teaspoon vanilla extract
1 pinch ground cinnamon
1 pinch ground cayenne pepper

Simmer the ingredients over medium heat until it is hot, but not boiling (sounds familiar, right?). Whisk the cocoa until it is frothy. Serve with cinnamon sticks. Makes 2 servings.

Orange Cocoa Recipe

4-1/2 cups milk
zest from 4 oranges
8 oz milk or semisweet chocolate, chopped, or chocolate chips

Heat the milk and zest from the oranges until the milk is hot. Remove from heat and allow to sit for 15-30 minutes. Strain out the orange. Return the flavored milk to medium heat and whisk in the chocolate until it is melted and the drink is smooth and frothy. Top with sweetened whipped cream or serve with a cinnamon stick. Serves 4.

Maple Hot Cocoa Recipe

1/4 cup sugar
1-1/2 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
1/4 cup water
1 tablespoon butter or margarine
4 cups milk
1 teaspoon real maple syrup
1 teaspoon vanilla extract
12 large marshmallows

Mix together the sugar, cocoa, salt, water, and butter in a large saucepan. Bring the mixture to a boil. Remove the pan from heat and stir in the milk, maple syrup, vanilla, and 8 of the marshmallows. Heat and stir the cocoa over medium heat until the marshmallows are melted. Divide the cocoa among four mugs, topping each with a large marshmallow. Serves 4.

Hot Chocolate Coffee Recipe

2 ounces baking chocolate, chopped
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
3 teaspoons instant coffee
2 cups hot water
2 cups hot milk
1-1/2 teaspoons vanilla extract

Melt the chocolate over a double boiler. Remove the chocolate from heat and stir in the sugar, salt, and instant coffee. Blend well, then stir in 1/4 cup of the hot water. When the mixture is smooth, add the rest of the hot water, the hot milk, and the vanilla. Whisk until foamy. Serves 4.
