This is actually easier than it seems. A really good trick is to get a bit higher than your subject and get them to lift their face up to you, instantly taking the weight off their face. And tell them, all women are beautiful especially the ones with a few extra pounds. JUst more to love. :)

Can you give me some tips around positioning the face so that "double chins" can be avoided? I know a lot of larger sized women and this seems to be a problem.

Thanks for the question!
When using a background for a portrait you usually need to consider your lighting. I still always like to keep things simple though. I usually use a medium 'soft box' for the face, and a white reflector on the shadow side to soften the shadow. Then I'll typically use a small light on the floor behind the subject to add some light to the canvas background.
The light on the face should always a fair bit stronger than the background light. Find a friend to experiment with.
