How to Cut Fresh Ginger for Cooking

First you'll want to use a vegetable peeler to remove the tough papery skin.

Then, usa a sharp knife to cut your peeled ginger into slices (cutting with the grain)

If your recipe calls for chopped fresh ginger, stack your slices and recut into thin strips and then cut again across the stacked pile into pieces.

If your recipe calls for grated ginger, simply rub your peeled ginger across a fine microplane grater.

    We usually grate it if you don't have a sharp enough knife to cut it. We use ginger a lot in cooking.
