Forget that Canned Pumpkin

How to Cook Fresh Pumpkin
Preparation and Cooking Directions
Use a sharp knife to cut the pumpkin in half and remove the seeds and fiber.Leave the rind on while you cut the pumpkin into 1 to 2 inch cubes.
Place the pumpkin cubes into a large sauce pan and add water to a 1 inch depth.
Cover and bring to a boil.
Reduce heat and simmer for about 30 minutes until pumpkin is fork tender.
Drain well.
Cool until your pumpkin can be handled comfortably.
Remove the outside peel (Rind) and discard.
Mash or process the pumpkin in a food processor until it is well blended.
Drain your mashed pumpkin through a sieve or colander for about fifteen minutes to remove excess liquid.

- Ah, pumpkins! I forgot to plant pumpkins this year, so I had to buy one when I wanted to prepare a pumpkin soup - hey, fall is pumpkin food period after all. Sadly, I got mistaken and took a red pumpkin which tastes like melon... not really the best for soup but in the end, it was tasteful.
Thanks for sharing your way of cooking fresh pumpkin - this is the way I use. But I'd like to give a try to Heather's way too, who knows, I might not forget about the pumpkin in the oven and not end up with burned pumpkin :D

- For crying out loud... I never knew it was this easy!!! Is there any reason why you have to take off the rind? I would think keeping it on would add a lot of great vitamins and minerals.

- Typically the rinds/skins of vegetables and fruits do not contain vitamins and minerals in any greater amount than what is in the flesh.

- I needed this one November in Australia when I had no American cookbooks at hand (and no internet). Australian stores don't carry pumpkin pie filling in a can and we had to cut up and cook the pumpkin for our pie using guesswork. Luckily it turned out OK as we had 20 Australians coming to experience our American Thanksgiving..

- I only recently found out -(via Squidoo) that you could buy pumpkin in a can. Don't think you can buy it here in Australia. Besides fresh always tastes better.
