    Ah, pumpkins! I forgot to plant pumpkins this year, so I had to buy one when I wanted to prepare a pumpkin soup - hey, fall is pumpkin food period after all. Sadly, I got mistaken and took a red pumpkin which tastes like melon... not really the best for soup but in the end, it was tasteful.

    Thanks for sharing your way of cooking fresh pumpkin - this is the way I use. But I'd like to give a try to Heather's way too, who knows, I might not forget about the pumpkin in the oven and not end up with burned pumpkin :D

    I've never done them in the oven but I'm sure it's possible. Anyone else know how?

    Yes, just cut pumpkin in half, bake about an hour and a half, then follow Robin's directions above to finish.

    This is something I can try. Taking the rind when it is cooked must be a lot easier.

    We are able to enjoy fresh pumpkin for about ten months of the year, as they keep so well stacked around our corridors! Great advice for preparation, thanks.

    For crying out loud... I never knew it was this easy!!! Is there any reason why you have to take off the rind? I would think keeping it on would add a lot of great vitamins and minerals.

    Typically the rinds/skins of vegetables and fruits do not contain vitamins and minerals in any greater amount than what is in the flesh.

    The first time I bought an organic pumpkin at the market and made a pie from it, I couldn't believe how much better the pie was. There's no comparison.

    The only time I cook pumpkin is when we carve them for Halloween and I make pumpkin soup. But I guess I really ought to try it at other times!

    I needed this one November in Australia when I had no American cookbooks at hand (and no internet). Australian stores don't carry pumpkin pie filling in a can and we had to cut up and cook the pumpkin for our pie using guesswork. Luckily it turned out OK as we had 20 Australians coming to experience our American Thanksgiving..

    I only recently found out -(via Squidoo) that you could buy pumpkin in a can. Don't think you can buy it here in Australia. Besides fresh always tastes better.

    Never tried cooking it fresh. I have always used the canned stuff. Maybe I'll give a trial run to making a pie with fresh pumpkin sometime between now and Thanksgiving.

    I found that mixing the pie filling in the blender cuts down on the 'strings'. The filling is smoother.
