Insider's Secrets About California's Finest Hamburgers

If you've ever enjoyed a Double-Double at In-N-Out Burger, you may know about the "protein" and "animal" versions of their hamburgers. But did you know there is an entire "Secret Menu"?

First, Why Everyone Likes Their Food 

The first In-N-Out Burger was founded in Baldwin Park, California in 1948 by Harry and Esther Snyder. Harry's idea of a "drive-thru" hamburger stand was the first of its kind, as other places brought the food out to you by carhops.

Since its beginning, In-N-Out has grown to more than 215 family-owned stores, owing their success to the quality of their food.

Following is a description of the freshness of their food from their website:

"Our commitment to quality starts with our hamburgers. We make them from fresh, 100% pure beef. They are free of additives, fillers and preservatives of any kind. But the focus on quality starts well before we deliver our hamburger patties to our stores. We own and operate a world class patty making facility. Since we only serve burgers, fries and drinks, making a high quality hamburger patty is everything to us.

We have always made every one of our hamburger patties ourselves using only whole chucks from premium cattle selected especially for In-N-Out Burger. We pay a premium to purchase fresh, high quality beef chucks. We individually inspect every single chuck we receive to make sure that it meets our standards. Then our highly skilled, in-house butchers remove the bones. We grind the meat ourselves and make it into patties ourselves. We do all of this in our facility on our property in Baldwin Park, California. These steps enable us to completely control the patty-making process and be absolutely certain of the quality and freshness of every patty we make. We've always made our hamburger patties this way.

Our commitment to quality doesn't stop there. Our lettuce is hand-leafed. Our American cheese is the real thing. And we use the plumpest, juiciest tomatoes we can find. All of our ingredients are delivered fresh to our stores. In fact, we don't even own a microwave, heat lamp, or freezer. We even bake our buns using old-fashioned, slow-rising sponge dough. And we make every burger one at a time, cooked fresh to order.

Of course, what's a great burger without great fries? At In-N-Out, we know a french fry is only as good as the potato it comes from. That's why we use the highest grade potatoes and ship them fresh from the farm. Then we cut them right in the store, one potato at a time. And cook them in 100% pure, cholesterol-free vegetable oil. To top it all off, we also make our delicious shakes from real ice cream. We wouldn't do it any other way. Because when it comes to burgers, fries and shakes, getting fresh is a good thing."

Off-Menu Item: "100 by 100" from a Las Vegas In-N-Out Burger

Next time you're at In-N-Out (like tomorrow, or even tonight!), order some of these Secret Menu specials:

3 by 3: Three meat patties and three slices of cheese.

4 by 4: Four meat patties and four slices of cheese.

2 by 4: Two meat patties and four slices of cheese.

Double Meat: Like a Double-Double without cheese.

3 by Meat: Three meat patties and no cheese.

Animal Style: The meat is cooked and fried with mustard and then pickles are added, extra spread and grilled onions are added.

Protein Style: For all you low-carbohydrate dieters, this is a burger with no bun (wrapped in lettuce).

Flying Dutchman: Two meat patties, two slices of melted cheese and nothing else - not even a bun!

Note: You used to be able to get any amount of burger patties and/or cheese slices you requested, but the company has recently changed its policy and now supposedly limits the patties and cheese slices to 4 by 4, sigh. But some people get around this by ordering Double-Doubles and however many Flying Dutchmen needed to make their burger as large as they'd like it!

Grilled Cheese: No meat, just melted cheese, tomato, lettuce and spread on a bun.

Extra Everything: Adds extra spread, tomato, lettuce, and onions (regular or grilled).

Extra Toast: The bun is toasted longer.

Chopped Chilies: Mild (pickled) chopped peppers (peperoncinis) are added to the burger.

Veggie Burger: A burger without the patty or cheese. Sometimes this is called the "Wish Burger," as in "I wish it had meat!"

On the Sal: Lettuce with tomato and "spread" (which very closely resembles 1000-Island Dressing).

Dump Truck: The scrapings from the grill!

How Do You Like Your Onions?

"Regular Onions" is default; it's a slice of fresh raw onion on the burger. Or get the onion slice grilled, raw chopped, raw whole, or sauteed. How the onions are ordered determines its placement on the sandwich; raw whole onions are placed with the cold ingredients, cooked onions are on the burger.

You Want Fries with That? 

Featured Off-Menu Item: "Animal Fries"

Animal Style Fries: Fries with cheese, spread, grilled onions, and pickles (if you ask for them).

Fries "Well-Done": Extra crispy fries . . . some say even better than the regular!

Fries "Light": Opposite of fries well-done, more raw than most people like 'em.

Fries "No Boat": Fries are placed directly onto the serving tray instead of the paper "boat."

Cheese Fries: Fries with cheese!

Lemon Fries: Ask and they'll squeeze a lemon slice over your fries.

Scooby Snack: A meat patty on top of your fries often asked for crushed.
(Note: This may not be available at all locations.)

How About a Drink? 

Featured Off-Menu Item: "Neapolitan Shake"

"Neapolitan" Shake: Strawberry, vanilla, and chocolate blended together.

"Black and White" Shake: Chocolate and vanilla together.

Root Beer Float: Root beer and a scoop of ice cream.

Root Beer Special: A blend of root beer and Dr. Pepper.

Lemon-Up: A blend of lemonade and 7-Up.

Tea-Ade: Also known as an Arnold Palmer, this is iced tea mixed with lemonade.

The above list is helpful for when going through the drive-through lane, but if you're dining in, you can make any combination of soft drinks you'd like at the drink machine! (They'll still have to custom-blend your shakes, though.)

Employee Suggestion

"Get a chocolate shake, a cup of coffee, and a cup with just a little ice. Mix the coffee and the shake and then pour it over the ice. We used to make these all the time while on break."

In-N-Out's Famous Bible Verses 

In-N-Out prints discreet references to Bible verses on their paper utensils. The print is small and out of the way, and only contains the book, chapter and verse numbers, not the actual text of the passages. The practice began in the 1980s during Rich Snyder's presidency, a reflection of the beliefs held by the Snyder family.

"Animal Style"

"Animal style" derives from a group of kids who used to hang out at old Store 2. The cooks would make burgers however these kids would like. These kids asked them one day what they were making and they said to just call it animal style (since the cooks referred to the kids as "a bunch of animals").
