The BEST Crackerjack Recipe Ever!

 

Here's a recipe for the best-tasting Crackerjack! I cooked up a batch of this one time to send with our son when he rode back to college with two girls who were his classmates. In the 2½ hours it took them to get there, they ate every crumb! (Nothing was said about the condition of their tummies afterwards.)

Jane's Version of Mac's Crackerjack 

Caution--this version of Crackerjack can be adicting!

8 cups unsalted popped corn
1 cup brown sugar
1 stick margarine
¼ cup corn syrup
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon vanilla
2 cups nuts (optional)

Mix popcorn and nuts and place in 2 greased 13" x 9" x 2" pans. Keep warm in 200°F oven.

Combine sugar, margarine, syrup, and salt in saucepan greased around inside. Boil 5 minutes or until soft ball stage* is reached. Remove from heat & stir in soda and flavoring. Slowly stir into popcorn.

Put in 300°F oven for 15 minutes. Stir and bake 5 more minutes. Cool on greased cookie sheets and break into clusters. Store in tightly covered container.

*Soft Ball Stage: At this temperature, sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand. (Found this definition on the net at: The Accidental Scientist: Science of Cooking)

Southeastern Indiana is where I make my home, on a small family farm. My husband and I have a grown son. I am fortunate to have a husband who is very supportive of my endeavors with my little eBay business, Gemjane's Dollhouse Miniatures.

I have had a variety of experiences so far in my life. Most of my life I have lived in Indiana, but I have also lived in Louisiana, and have taught school in both states. For three years the mid-70's I lived in Australia, in the state of Queensland, where I taught school for a year in a suburb of Brisbane. That was followed by two years in the Outback supervising the children's schoolwork, (lessons from a correspondence school & "School of the Air"), one year each at two different sheep and cattle stations. One station was 90 miles from the nearest town, and the other was 120 miles from town (!). Three of the best years of my life! I'm still in touch with a number of Aussie friends.

I have owned a one-person small greenhouse business, specializing in culinary herbs and perennial flowers; I have also worked as the perennial manager in a garden center.

My most recent venture is my eBay Store in which I sell doll house miniatures.

Little things have always intrigued me. I come from a family of 5 girls, and we all loved playing with our couple of dollhouses. We had miscellaneous bits of this and that in the way of dollhouse miniatures, mostly inexpensive hand-me-downs from friends and relatives. And what we didn't have we created. Once in a while it was a great treat to pick out a few things at the Dime Store. I spent some of the happiest hours of my childhood playing with the dollhouse miniatures. Now one of my sisters also sells dollhouse miniatures, and another is very active in a miniature club, and makes minis, including knitting and crocheting tiny things.
