But, it wasn't until Wilson met Will Rogers that he was inspired to take his act to the road. His road tour was such a hit that friends encouraged him to record albums for fans to enjoy over and over again. Eventually he made over 27 albums with his first, "The Humorous World of Justin Wilson" selling over one million copies.
His albums were so well received that he was asked to be a guest on the "The Ed Sullivan Show" in 1961. It was also where he first introduced his famous quote, "I Gar-on-tee" to the world.

So, just how was it that Justin Wilson became the famous chef he known for even still today? During his time spent telling his Humorous stories, Wilson would always mention himself as being a good cook. With his love for cooking and already having been known for his humoristic ways, Wilson published his first cookbook titled, "The Justin Wilson Cook Book" in 1965.Wilson didn't stop with writing cookbooks, however. In 1974 he wrote his first humoristic book titled, "Justin Wilson's Cajun Humor." Five years later he came out with his second cookbook called, "The Justin Wilson #2 Cookbook: Cookin' Cajun."

Eventually, Louisiana Chef Justin Wilson published another humorous book and five more cookbooks. Wilson also released a Christmas Album and recorded the background music for his "Louisiana Cookin" show.
In 2000, the Atlanta Journal Constitution voted Wilson as one of the 100 most influential southerners of the 2oth century.

Sadly, in September of 2001, passed away at the age of 87. Although he is gone, Louisiana Chef Justin Wilson still lives on.He lives on through the recordings of his cooking shows, his books, his music and through the love of his daughter who run's his company and the Justin Wilson website. And most of all he lives on through the hearts of those who loved his humor and love for Cajun Cooking.
In a final word, a chef is like a fine wine whose true greatness gets better as the years go by. But a chef with true humor goes beyond true greatness.
