Key Limes

The Key lime is a citrus fruit also known as the Mexican lime, West Indian lime or Bartender's lime and grows on a shrub about 5 metres in height. The Key Lime fruit is actually a yellow color when ripe, but is usually picked when still green giving it a more tart and bitter flavor. It is smaller, seedier, has a higher acidity, a stronger aroma, and a thinner rind than the more commonly available lime. Key lime juice, unlike regular lime juice, is also pale yellow in color. The Key Lime name comes from its association with the Florida Keys, where it is best known as the primary flavoring ingredient in a Key Lime Pie Recipe. Key Lime Pie 

Key Lime Pie is a dessert made of key lime juice, egg yolks, and sweetened condensed milk in a pie crust, topped with either whipped cream or merigue. The filling in real key lime pie is yellow however non-traditional cooks have taken to adding food coloring to give the pie filling a green color which is frowned upon by those who make genuine Key Lime Pies.

What makes the Key Lime Pie special is that is does not have to be baked like other pies because the reaction between the condensed milk and the acidic key lime juice causes the filling to thicken on its own without the required baking. The majority of early Key Lime Pie Recipes do not instruct the cook to bake the pie, totally relying on the chemical reaction to produce the proper consistency of the filling. Today, in the interest of public safety concerns to avoid the consumption of raw eggs, Key Lime Pies are usually baked for a short period of time which thickens the texture more than the reaction alone.

Key Lime Pie Recipe 

(Baked Modern)

The following Key Lime Pie Recipe takes approximately 45 to 60 minutes in preparation and tastes just as amazing as the more traditional recipes and is baked in a similar fashion to a cheesecake.

Ingredients

7 whole large eggs
3 quarts of sweetened condensed milk (12 cups)
12 oz. key lime juice (1 1/2 cups - Freshly squeezed preferred is approximately 36 Key Limes)
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
Whipped Cream topping or meringue (Meringue recipe below)

Directions

Combine the graham cracker crumbs and melted butter in a mixing bowl.
Press the mixture into the bottom of a 12 inch springform pan and bake at 350º F. for 5-7 minutes and set aside.
In a large mixing bowl, combine the sweetened condensed milk and the eggs and mix at low speed until the eggs are fully mixed.
Add the key lime juice and mix again at low speed until well mixed.
Place whipped mixture into the springform pan and bake at 250º F. for 2 to 2 1/2 hours until set.
If choosing the meringue topping option, spread over pie at the 2 hour mark and continue baking until the peaks are golden brown.
Let fully cool before slicing.
If choosing the whipped cream topping option, garnish after the cooling period.

Meringue Recipe For Baked Key Lime Pie 

Always place egg whites in a clean glass or metal bowl, and not a plastic mixing bowl. Beat with an electric mixer on medium speed or with a rotary beater.

Ingredients

4 egg whites
1/2 cup sugar
1 teaspoon vanilla extract

Directions

In a mixing bowl beat the egg whites until frothy.
Gradually add in the sugar and continue to beat until stiff.
Combine vanilla extract and choose whichever step below based on your desired consistancy of the meringue.
For soft peaks - Beat until egg whites form peaks with tips that curl over when the beater is lifted.
For stiff peaks - Continue beating egg whites on high speed until they form peaks with tips that stand straight up when the beater is lifted.
Spread over pie and follow the above Key Lime Pie Recipe and bake until peaks are golden brown.

Key Lime Pie Recipe 

(Non-Baked Traditional)

This Key Lime Pie Recipe is much closer to the traditional recipe and although it takes less time to prepare, traditional Key Lime Pie must sit refrigerated overnight to fully set.

Ingredients

1 can of 14 oz. sweetened condensed milk
4 egg yolks
4 oz. key lime juice (1/2 cup - Fresh squeezed preferred and approximately 12 key limes)
1 9" graham cracker pie shell
Whipped Cream topping

Directions

In a mixing bowl combine milk and eggs.
Slowly add the Key Lime juice and mix thoroughly.
Pour the mixture into the 9" graham cracker pie shell.
Refrigerate overnight.
Top with whipped cream before serving.
