Preserving food by dehydrating is economical and helps you create a stash of highly nutritious organic fruits and vegetables. Prior to having my LEM dehydrator, I owned an American Harvest Dehydrator. It worked ok, but never kept up with the demands of our family, the drying times were very long and required a lot of attention rotating trays. I wanted a dehydrator that had more features, the LEM gives me a timer and more temperature settings. I also wanted a stainless steel dehydrator that let me get away from plastic. I don't store my food in plastic, nor do I cook with plastic. Because food spends a lot of time in a dehydrator, I was thrilled to be able to move away from plastic in my dehydrator. There are several good dehydrators out there, TSM is one of them, in the end I chose a LEM Stainless Steel 10 Tray model because the price was right and ten trays is what we needed to for our family.

During the summer months when fresh organic produce is available we use our CSA shares to put up food for winter. As each week goes by my dried soup stash grows; potatoes, beets, celeriac, carrots, onions, garlic, kale, leeks, celery, beans, carrots, corn, zucchini, tomatoes and fresh herbs all go into the dehydrator and into mason jars for later use. We try and focus on supporting our local farmers and purchase as much produce grown as close to home as possible, sold by our local grocer. Many like Loblaw's post information to let you know if it's local produce, which makes it easier to choose.

I love this simple recipes on days when I don't have time to prepare a hot meal, I don't have to chop and dice and clean up. To make Dragon Soup in a pinch, I simply add a mix of organic dried veggies to vegetarian soup stock and within 30 minutes I have a hearty veggie soup. You can add legumes like lentils, chick peas or pearl barley to make it even more hearty. Thanks to my dehydrator healthy meals are fast and easy!

We were able to store tons of organic food this year by participating in a local CSA. Get yourself a dehydrator, and find a local organic farm that offers CSA shares, start your own organic garden if you don't already have one, you won't regret it.

If you can't find a LEM Dehydrator, then take a look at The Sausage Maker (TSM) Dehydrator. Before I found my LEM, I was set to order a 5 tray TSM dehydrator. The D-5 model has a rear mounted fan like the LEM which helps circulate the air evenly and consistently, speeding up drying times. This model makes clean up easy, take all the trays and you can access the interior of the unit, just wipe with a damp cloth and your done.
