Limpa - the traditional Swedish Rye Bread

This is a bread I grew up loving. It was usually fresh baked at Grandma's house and the heavenly scent filled the house. We always got to eat some fresh from the oven with fresh pure butter melting into it. The round loaves sometimes had the sweet tidbits of dried candied orange peel and sometimes the tangy taste of fennel seed. (My favorite was plain with neither and that is the way I usually bake it today.) Other times on an afternoon, I remember Daddy stopping work on the farm for a cup of coffee and Limpa with butter and a nice slice of cheddar cheese.

Everyone has their own ideas how Limpa should be made.

I have found this site is fantastic for recipes of all types. It provides a very authentic limpa recipe with the common variation - with either fennel seeds, plain, or with candied orange peel.

Limpa 

In memory of Emilia Samuelson - my Grandma

Ingredients:
1 pkg. yeast dissolved in 1/2 c. warm water
1 lg. tbsp. lard
1 tbsp. salt - optional
3/4 c. Brer Rabbit molasses
1 c. brown sugar
1 quart hot (but not boiling) water or milk
1 tbsp. candied orange peel - finely chopped - optional
2 c. ry flour
8-9 c. wheat flour

Mix when the liquid has cooled to luke warm, add yeast, molasses, sugar, salt, lard, and 7 cups of flour (2 rye & 5 wheat). Mix, cover, and let rise until double in bulk. Add 1 cup flour and work down. Let rise again. Tip out onto a floured board or counter. Knead about 20 turns. Work into 4 round loaves; let rise again. Bake at 350 degrees for 45 minutes or until when thumped on bottom it sounds hollow.
