Yummy Indian Low Fat Food

Hi there. I created this lens to share a yummy recipe to make Vegetable & Chickpea Curry. This is a quick, yummy, low fat indian dish that you can make faster than running out to the local takeaway.

In these current economic times why not cut out some of those expensive takeaways and cook the stuff at home with the freshest of ingredients and save money as well. Makes sense right?

The Recipe 

Here's How to Cook The Dish . . .

Okay, you will need the following Ingredients (serves 4)

* 2 tablespoon vegetable oil
* 1 large brown onion, chopped
* 2 garlic cloves, crushed
* 1 teaspoon turmeric powder
* 2 teaspoons chilly powder
* 1 teaspoons ground cumin
* 3 teaspoons coriander powder
* Sprinkle of fresh coriander
* 1 1/2 teaspoons salt
* 2 tablespoons sugar
* 800g can diced tomatoes
* 300g can chickpeas, drained, rinsed
* 150g orange sweet potato, peeled, diced
* 1 large carrot, peeled, diced
* 1 small red capsicum, diced
* 250g cauliflower, cut into florets
* 100g button mushrooms, halved
* steamed jasmine rice and natural yoghurt, to serve

Method

1. Heat oil in a large saucepan over medium heat. Add onion. Cook, stirring often, for 2 to 3 minutes or until onion is soft. Add garlic and stir for 30 secs. Add all the vegetables and cook for 5 mins.
2.Now add all the spices: turmeric powder, coriander powder, chilly powder, cumin powder, salt and sugar. Cook, stirring, for 2 minutes or until aromatic.
3. Stir in tomatoes. Simmer for 3 minutes or until sauce thickens. Add 2 cups cold water and the chickpeas. Increase heat to high. Bring to the boil.
4. Cover and cook on medium heat for 10 mins.
5. Eat with rice. Garnish with fresh coriander.
