A Medifast Soup Recipe
Ingredients5 oz cooked chicken breast
1 cube chicken bouillion
1 cup water
1/2 cup stewed, diced tomatoes
1/4 cup green pepper
1 tsp diced onion
1 clove garlic, minced
1/2 tsp chili powder
1/4 tsp ground cumin
Dash ground, black pepper
Directions
Bake chicken and cut into cubes; set aside. In a large pan, combine water, bouillon cube, diced tomatoes, onion, green pepper and onion. Bring to a boil. Add chicken, reduce heat, cover and simmer for 10 minutes. Add all the remaining ingredients except the cilantro. Pour soup into a bowl.

Chicken Strips
A Medifast Lean and Green Recipe
Ingredients1 packet of Medifast Snack Crackers
6 ounces chicken breast, cut into strips
2 Tbs. Walden Farms salad dressing, any flavor
Directions
Heat oven to 350 degrees. Pulse one packet of Medifast Snack Crackers in the food processer until it becomes fine crumbs. Dip chicken VERY lightly into Walden Farms Salad dressing of your choice and shake off excess. Press the chicken strips into crumbs. Place the chicken on a lightly greased baking sheet. Bake for 30-40 minutes.

Balsamic Chicken
A New Medifast Recipe
Ingredients6oz. chicken breasts (or strips of chicken)
1/2 cloves garlic, minced
1 tablespoons rosemary leaves, chopped
1 tablespoons extra virgin olive oil
1 Tablespoon balsamic vinegar
Salt and pepper to taste
Directions
Combine garlic, rosemary, black pepper and salt. Mix with the olive oil. Rub the outside of the chicken with the mixture. Cover and refrigerate for 3 hours. Preheat oven to 350 degrees. Bake for 45 minutes or until done.
Makes 1 serving
Broccoli and Chicken
Another New Medifast Recipe
Ingredients6 oz. chicken breasts (boneless skinless)
1/4 cup reduced sodium chicken broth
1 teaspoon light soy sauce
1 1/2 cups broccoli florets
1/2 clove garlic, minced
1 teaspoon Dijon mustard
Directions
Mix chicken broth and soy sauce and set aside.
Steam broccoli and set in a bowl. Spray non-stick cooking spray in a pan and cook minced garlic. Remove from skillet; cover to keep warm.
Add chicken to the garlic; cook and stir 3-4 minutes or until cooked thoroughly. Add broth mixture, mix well and bring to boil. Reduce heat to medium low. Stir in mustard until well blended. Return broccoli mixture to pan, mix lightly. Cook until heated thoroughly.

Italian Chicken
A Medifast Recipe for 2
IngredientsIngredients1/2 Tbsp olive oil
2 garlic cloves, minced
2 boneless skinless chicken breasts
2 Tbsp of fresh rosemary or oregano
1/4 tsp crushed red pepper
1/2 teaspoon balsalmic vinegar
1/4 tsp salt
black pepper
Directions
Preheat oven to 400 degrees. Combine oil, garlic, rosemary and crushed red pepper. Brush mixture on chicken and season with pepper, to taste. Cover and soak in marinade for 3 hours.
Season chicken with salt, place in a baking dish, cover with foil and bake for 30 minutes.
Increase the oven temperature to 450 degrees. Drizzle the vinegar over the chicken. Bake uncovered, until chicken is browned for 10 minutes.
Makes 2 servings
